Air Fryer Breakfast Taquito
Sometimes you just need a nice warm breakfast to get you going in the morning, and recently since I’ve fallen in love with lavash bread, I decided to try my hand at using the lavash to make a breakfast taquito! Being as I tend to be a lot more of a savory breakfast person, rather than a sweet breakfast person, breakfast taquitos are pretty much my jam.
Normally breakfast taquitos are made with flour tortillas, but the lavash bread gives me a lot more bang for my buck, if you know what I mean. (It’s fewer calories and whole wheat!) Even though it’s still pretty chilly outside in the mornings, I figured the air fryer would be a quicker and easier way to get my breakfast taquito hot all the way through.
Lavash bread makes a great container for these hearty wraps. It’s bendable and soft so it doesn’t break very easily. Plus, it crisps up pretty well in the air fryer to give you a breakfast taquito with some crunch, rather than just a soggy bite of tortilla.
For today, I kept my taquito pretty simple with the basic bacon, egg and cheese. I also added in some pico to give that Tex-Mex taste that I know and love. But, I can’t wait to play around with other flavors along the way. Maybe a mushroom swiss or spinach and feta!
Keep in mind that these are more taquito style and not breakfast BURRITO or TACO style. This breakfast bite has some crunch and texture to it all thanks to the air fryer. You could try baking it, but I haven’t tried it yet myself!
