Healthified Huevos Rancheros

I'm a Texas girl, and with that comes lots and lots of Tex-Mex, and not just for dinner either. Breakfast, brunch, lunch... doesn't matter the time of day, there's always a good excuse for Tex-Mex! One of my most recent favorites for breakfast or brunch is a healthier take on an older classic, Huevos Rancheros!

Don't know what Huevos Rancheros is? You poor thing!

Huevos Rancheros (rancher's eggs) is a pretty basic dish, usually consisting of fried eggs over a lightly fried tortilla and served with beans, salsa, and avocado in some form or another. Everything is generally topped off with a traditional tomato-chili sauce otherwise known as 'ranchero' sauce.

I've lightened and made it better-for-you (and for me), by baking my tortilla first and foremost. I also used a fat free refried black bean, and pan-cooked my egg in nothing more than a little bit of non-stick cooking spray.

Now I used half a packet of 100 calorie guacamole to save me time and energy this morning, but you could just as easily top this off with a few slices of fresh avocado and end up just as happy.

I mean, avocado is just the bees-knees isn't it? No matter which way you eat it as far as I'm concerned!

By the way, this is definitely more of a fork-and-knife sort of breakfast.

Unlike a similar breakfast tostada, Huevos Rancheros is served on a softer tortilla and has a lot more of a messy sloppy delicious sauce.

This recipe was listed for one serving, but you could very easily double, triple, or multiply by however many mouths you need to feed!

The Skinny:
Servings: 1 • Size: 1 Huevos Rancheros • Calories: 280 • Fat: 10.8 g • Carb: 32.8 g • Fiber: 8 g • Protein: 13.7 g • Sugar: 2.2 g • Sodium: 485 mg

Ingredients:
1 'Super Soft' Corn Tortillas (Mine were 70 cal. each.)
1/4 C. Fat Free Refried Black Beans
1 Whole Large Egg
2 Tbsp. Salsa/Picante
1/2 (100 Cal. Pack) Guacamole
1/4 Oz. Queso Fresco, Crumbled
Tomato-Chili Sauce or Hot Sauce, Drizzled

Directions:
Preheat the oven to 350 degrees F.

Once the oven has preheated, place the tortilla into the oven and directly onto the wire racks; bake for 3-5 minutes or until the tortilla's edges are just starting to crisp, but they are not entirely hard.

While the tortilla is cooking, heat the beans via your method of choice.

Also, cook your egg to your preferred doneness.

I pan cook mine to an over-medium or over-hard - depends on my mood for the day.

Once the tortilla is done, carefully remove it from the oven and set on a plate.

Top the tortilla with the beans and one of the cooked eggs.

Finally top it off with salsa, the guacamole, and a sprinkle of quest fresco magic.

I gave mine an extra drizzle of hot sauce.

Enjoy right away!
