The Forking Skinny Dinner Plan (Week 10)

Below is this week's dinner plan!

These dinner plans are based off of a 4 person family and include the meal plan and shopping list for your convenience.

I've also created the shopping list with the notion that you have basic spices and pantry/kitchen staples on hand. So, you'll want to double check the recipes and the shopping list to be sure that you have everything you need.

Skinny Fork Dinner Plan (Week 10)

Monday: Healhified Crock Pot Beef & Broccoli
Tuesday: One Pot Healthified Lasagna Soup
Wednesday: Almond & Flax Chicken Nuggets + Steamed Green Beans + Cauli Smash
Thursday: Leftover One Pot Healthified Lasagna Soup
Friday: Kid's Choice 'Family' Night!
Saturday: Pizza Night!
Sunday: Skinny Crustless Quiche + Tomato Basil Soup

Shopping List:

Healthified Crock Pot Beef & Broccoli:
1 1/4 Lb. Round-Roast, Sliced into very thin strips.
1 C. Unsalted Beef Broth
2 Tbsp. Reduced Sodium Soy Sauce
1/2 Tbsp. Natural Sweetener & Brown Sugar Blend
1 Tbsp. Ginger Root
2 Tsp. Sesame Oil
3 Garlic Cloves
2 C. Broccoli Florets (Fresh or Frozen)
1/2 Red Bell Pepper
2 Tbsp. Corn Starch
2 Tbsp. Cold Water
Rice or Quinoa

One Pot Healhified Lasagna Soup:
1 Red Bell Pepper
1 Yellow Onion
1 Lb. Extra Lean Ground Turkey
4 Garlic Cloves
8 C. Unsalted Chicken Stock
24 Oz. Spaghetti Sauce
15 Oz. 'No Salt Added' Crushed Tomatoes
1/2 C. Small Whole Wheat Noodles
2 Tbsp. 'No Salt Added' Tomato Paste
3 Tsp. Salt-Free Dry Italian Seasoning (I used Oregano, Basil, and Parsley.
1 Bayleaf
Fat Free Ricotta (Optional)

Almond & Flax Chicken Nuggets:
1 Lb. Boneless Skinless Chicken Breast
2 Tsp. Extra Virgin Olive Oil
1/2 C. Almonds
2 Tbsp. Ground Flax Seed
2 Tbsp. Parmesan Cheese
1/2 Tsp. Paprika
1/4 Tsp. Garlic Powder
1/4 Tsp. Dry Mustard
Green Beans

Cauliflower & Hominy Smash:
1 (14.5 Oz.) Can White Hominy
2 C. Cauliflower (I used frozen.)
1/2 C. Fat Free Milk
1 Tbsp. Light Butter
Pinch of Paprika
Pinch of Cayenne
Pinch of Crushed Red Pepper Flakes

Skinny Crustless Quiche:
10 Oz. Frozen Chopped Spinach
8 Oz. Fresh Mushrooms
2 Garlic Cloves
1/4 C. Reduced Fat Feta
2 Whole Large Eggs
4 Large Egg Whites
1 C. Fat Free Milk
3/4 C. Reduced Fat Cheese, Shredded (I used an Italian Blend.)
Salt & Pepper to Taste

Tomato Basil Soup:
1 Tbsp. Extra Virgin Olive Oil
1 Medium Onion
3/4 C. Carrot
4 Cloves Garlic
2 (14.5 Oz) Cans Diced Tomatoes 'No Salt Added'
1 (14.5 Oz) Can Italian Style Diced Tomatoes
2 C. Fat Free Reduced Sodium Chicken Broth
1 Tbsp. Dried Basil
1/2 Tsp. Oregano
1 Tsp. Sugar
1/4 Tsp. Crushed Red Pepper Flakes
3 Oz. Fat Free Cream Cheese
