The Forking Skinny Dinner Plan (Week 12)

Below is this week's dinner plan!

These dinner plans are based off of a 4 person family and include the meal plan and shopping list for your convenience.

I've also created the shopping list with the notion that you have basic spices and pantry/kitchen staples on hand. So, you'll want to double check the recipes and the shopping list to be sure that you have everything you need.

Skinny Fork Dinner Plan (Week 12)

Monday: Sweet Potato & Black Bean Tacos
Tuesday: Crock Pot Mojo Pork + Rice/Quinoa + Sweet Potato + Plantain
Wednesday: Skinny Chicken Parmesan Casserole + Side Salad
Thursday: Leftover Crock Pot Mojo Pork + Rice/Quinoa + Sweet Potato + Plantain
Friday: Kid's Choice 'Family' Night!
Saturday: Pizza Night!
Sunday: Healthified Juicy Lucy Burgers +Veggie Chips

Shopping List:

Sweet Potato & Black Bean Tacos:
1 Large Sweet Potato
1/2 Tsp. Cumin
A Pinch of Cayenne
15 Oz. 'No Salt Added' Black Beans
1 C. Broccoli Slaw
2 Tbsp. Cilantro
1 Lime
4 Tbsp. Plain Fat Free Greek Yogurt
1 Tbsp. Hot Sauce
Salt & Pepper to Taste
8 Corn Tortillas

Crock Pot Mojo Pork:
3/4 Lb. Pork Tenderloin
1 Chicken Reduced Sodium Bullion
1 Onion
1 Jalapeno
1 Orange
2 Limes
2 Lemons
8 Cloves Garlic
1/2 Tbsp. Salt
1 Tsp. Oregano
1/2 Tsp. Black Pepper
1/2 Tsp. Cumin
1/2 Tsp. Paprika
Rice or Quinoa
Sweet Potato
Plantain

Skinny Chicken Parmesan Casserole:
2 Large (12 Oz. Total) Boneless Skinless Chicken Breasts
1 (23.5 Oz.) Jar Francesco Rinaldi Traditional No Salt Added Pasta Sauce
1 1/2 C. Reduced Fat Shredded Italian Cheese
1/2 C. Whole Wheat Bread Crumbs
1/2 C. Panko
5 Fresh Basil Leaves
Salt & Pepper to Taste
Side Salad

Healthified Juicy Lucy Burgers:
1 Lb. Extra Lean Ground Beef
2/3 C. Shredded Carrot
1/4 C. Whole Wheat Bread Crumb
2 Tbsp. Original Style BBQ Sauce
4 Egg Whites
1 Green Onion
1 Tsp. Salt-Free Burger Seasoning
4 Slices Sharp American Cheese
Veggie Chips
