Watermelon Salad

This is a super fun and simple salad that combines some of my favorite traditional summer flavors together in a rather unique way!

The sweetness of the watermelon, the tart zip of balsamic and lemon, and the boldness of gorgonzola, and the creamy-cool of that heavenly avocado... they all combine into a wonderful array of perfection.

It's like a rare vegetarian steak.  Red and juicy. Mmm...

The Skinny:

Ingredients:
Salad:
1 Personal Sized Watermelon, Trimmed & Sliced into 4 'Steaks'
16 Cherry/Grape Tomatoes, Halved
1 Avocado, Pitted & Sliced or Cubed
1/4 C. Gorgonzola Crumbles (Feta or Blue Cheese would work too!)
4 C. Fresh Spinach
8 Fresh Basil Leaves
Salt & Pepper to Taste

Dressing:
1/4 Red Onion, Sliced
1 Lemon, Juiced
1/2 C. Balsamic Vinegar
2 Tbsp. Olive Oil

Directions:
Mix together the dressing ingredients. 

I'm not a huge raw  onion fan (it's something about the crunchy texture), so I like to soak my onions in the dressing for at least 30 minutes to loosen them up a bit. I've found that this also allows for the dressing to take on some of the taste from the onion as well.

Plate the watermelon 'steaks' and set aside.

Remove the onions from the dressing and combine with the remaining salad ingredients in a large bowl. Give everything a good toss.

Divide the salad among the plates. Place the salad atop the watermelon 'steaks'.

Top with the dressing or serve it on the side and enjoy!
