Western Omelette Crustless Quiche

Now that the holidays are coming to a close for the year, I know that we’ve all got our fair share of leftover turkey and/or ham in our freezers. This is one of my FAVORITE times of year for this VERY reason. And considering there was a little bit of a communication failure over Christmas Eve and Christmas dinner, I’ve ended up with a BUNCH of leftovers.

You don’t see me complaining about that though. I love to make leftover rewind recipes, especially with leftover holiday meats. They always make for a super favorable, easy, and amazing second recipe. So what’s the first thing that comes to mind with leftovers? Casseroles? Soups? For me, it’s quiche!

So, what’s a western omelette anyway? Well, it’s usually an overstuffed omelette that’s loaded up with ham, cheddar, peppers, and onions. Today we’re turning that into a crustless quiche. Why crustless? Why crust?! You don’t need crust with a quiche. It adds on carbs and calories for no good damn reason. I would much rather have a HUGE slice of guilt-free crustless quiche than a tiny portion of a traditional quiche.

More flavor. More fun.

It’s good stuff all the way around. Plus, one of my favorite parts about a quiche is that it’s a perfect meal day or night. Want it for breakfast? Go for it! Brunch? Yep, that works too? Lunch time? Serve it with a salad? Dinner? Try pairing it with soup!

Today we ended up having this for brunch. So I served mine with both some chopped salad. And you know what? We’re going to indulge in more of it for dinner with soup and more salad. We’ve got to get our fill of leafy greens after all that heavy stuff for Christmas!
