It's hard to believe, but summer is coming, y'all! I should know too since my birthday falls on the first day of summer. Happy Cinco De Mayo! As per the usual, I'm more than excited about Cinco De Mayo. Why? Because Mexican food and Tex-Mex are my all time favorites. I could seriously eat Mexican all day every day for the rest of my days and be completely fine and happy with it. Honestly though, I've never really ordered Migas from anywhere before. So, this was definitely a journey for me today.

I've heard a lot about Migas and how good it is, and I'm not really sure why I never got it. I guess because my visits to Mexican style restaurants is reserved for dinner time usually. Either way, I got my hot little hands on some local organic eggs, cheese, and tortilla chips this week. What could be more perfect to make Migas with that all that?...

Crispy Kale Chips

I'll readily admit that I am generally not a fan of kale. I don't like it in my soup, especially.

Zuppa Toscana and Olive Garden? Please, no.

It's not the flavor of kale that I don't find pleasant... it's the... way it holds it's form and something about the texture of the 'curly' ends.

I much prefer my spinach. I love my spinach. Raw. Cooked. Sauted. In soup. As a salad. It doesn't matter.

I keep hearing and seeing things about kale chips. Supposedly you could do the same thing with spinach. Perfect! Well... not so perfect. Unfortunately, when I tried 'spinach chips' a few months back... it didn't fair too well. As we all know, spinach is good at wilting under heat. And while it tasted good, it was not something that you could readily snack on. It just... flakes into nothingness. Sad Face....
