Breakfast Waffledilla

Look, I don’t know - I love my waffle maker and I am always trying to come up with new and fun ways to use it that aren’t just standard waffles. This Breakfast Waffledilla is definitely that. It combines all the best parts of a breakfast quesadilla and stuffs it into waffle form. That’s right, this is full of bacon, egg, and cheese goodness and only takes a few minutes of hands on time.

I added some jalapeños to mine, but some fresh pico would be another good addition. There were really only a few things I could do to this to keep it lightened up, and that mostly involved the tortillas. I went with a low carb whole wheat tortilla that’s only 45 calories for one tortilla. I also went with a low sodium center cut bacon, because no one can ever tell the difference!

Other than that, it’s all about the cheese. Reduced fat cheddar is good, but you could also use a jack cheese or really whatever tickles your fancy. I served mine with fresh berries and some salsa on the side for dipping, but some guacamole would be good here too!

The best part about these Breakfast Waffledillas is that they are customizable for each person. So everyone can get what they want in them - even if it’s this base of bacon, egg and cheese.

This Breakfast Waffledilla combines bacon, eggs, and cheese with tortillas just like a quesadilla, but it's cooked like a waffle for a fun twist on breakfast!

Ingredients

  • 1 Whole Large Egg
  • 2 Low Carb Whole Wheat Tortillas (45 Cal each.)
  • 1 Tbsp. Chopped Cooked Low Sodium Center Cut Bacon
  • 1 Tbsp. Shredded Reduced Fat Cheddar

Instructions

  1. Preheat the waffle iron.
  2. Lightly coat a small skillet with non-stick cooking spray and cook the 1 Whole Large Egg to scramble.
  3. Place one tortilla down on one side of the waffle iron and top with the egg, followed by the 1 Tbsp. Chopped Cooked Low Sodium Center Cut Bacon, and 1 Tbsp. Shredded Reduced Fat Cheddar.
  4. Top it off with the other tortilla and close the waffle iron. Press down slightly and set to cook for 5 minutes or until the cheese is melted and the tortilla is crisp on the edges.
  5. Once done, remove from the waffle iron and enjoy right away!
