Cauliflower Parmesan

This Cauliflower Parmesan is a delicious twist on the classic Italian dish, Chicken Parmesan. This vegetarian version replaces the chicken with cauliflower steaks that are lightly brushed with oil, baked until tender, and then smothered in marinara sauce and cheese to be melted.

It's a satisfying and flavorful dish that is perfect for a cozy dinner at home. Enjoy Cauliflower Parmesan on its own or serve it over a bed of pasta for a hearty meal that will impress even the pickiest eaters. For being such a simple 4 ingredient recipe, this Cauliflower Parmesan is surprisingly filling and delicious!

This has been on the menu twice in the last two weeks, just because it’s so good, so easy, and so full of vegetable goodness. I’ve just been serving it as is, but it would be good and more substantial if paired with some sides or pasta or rice. I' haven’t done that myself, only because I’ve been trying to eat a bit more lighter in the evenings.

This vegetarian version replaces the chicken with cauliflower steaks that are lightly brushed with oil, baked until tender, and then smothered in marinara sauce and cheese to be melted.

Ingredients

  • 1 Head of Cauliflower
  • 2 Tbsp. Olive Oil
  • 1 C. Marinara Sauce
  • 1 C. Reduced Fat Shredded Mozzarella Cheese

Instructions

  1. Preheat the oven to 425 degrees F. and line a baking sheet with foil or non-stick spray.
  2. Cut the head of cauliflower into 4 'steaks' and set them on the baking sheet.
  3. Brush both sides with the 2 Tbsp. Olive Oil divided evenly between the four and season with salt & pepper.
  4. Place the baking sheet into the oven and bake for 20 minutes. Flip the cauliflower over and bake for another 10-15 minutes.
  5. Remove the cauliflower from the oven and set the oven to broil. Divide the 1 C. Marinara Sauce evenly between the four cauliflower steaks and top with the 1 C. Reduced Fat Shredded Mozzarella Cheese divided evenly as well.
  6. Place the baking sheet back into the oven and bake for another 3-5 minutes or until the cheese is melted and bubbly.
  7. Once done, remove from the oven and serve right away to enjoy!
