Hasselback Zucchini

I lightened these Hasselback Zucchinis up by using a reduced fat feta cheese and plant of herbs and spices. The red chili flakes really give this vegetable side dish a stand out kick in the pants! I served mine along side some grilled steaks for a simple and delicious dinner.

Thinly sliced, seasoned to perfection, and stuffed with feta cheese, these zucchinis are baked to delicious and tender perfection.

Ingredients

  • 2 Medium Size Zucchini Squash
  • 2 Tbsp. Olive Oil
  • 4 Tbsp. Reduced Fat Feta Cheese
  • 2 Tbsp. Fresh Chopped Basil
  • 1/8 Tsp. Garlic Powder
  • 1/8 Tsp. Paprika
  • 1/8 Tsp. Red Pepper Flakes
  • Lemon Juiced
  • Salt & Pepper to Taste

Instructions

  1. Preheat the oven to 400 degrees F. and line a baking sheet with non-stick foil or a silicone baking mat; set aside.
  2. Slice the zucchinis about 3/4 of the way through, enough so that you can stuff in between each slice, but also enough left so that they don't break.
  3. Drizzle each zucchini with 2 Tbsp. Olive Oil then divide the feta cheese mixture evenly between the two zucchini and stuff each in between the slices made.
  4. In a small bowl, mix together the 4 Tbsp. Reduced Fat Feta Cheese, 2 Tbsp. Fresh Chopped Basil, 1/8 Tsp. Garlic Powder, 1/8 Tsp. Paprika, 1/8 Tsp. Red Pepper Flakes, Lemon Juice, and Salt & Pepper to Taste; set aside.
  5. Place the zucchini in the oven to bake for about 45 minutes or until the zucchini are nice and tender.
  6. Once done, remove from the oven and serve right away.
