I topped mine off with a drizzle of blueberry muffin almond butter one morning, and another morning I warmed the oats up in a bowl with some unsweetened vanilla almond milk. No matter how you go about it, you’re sure to love this delicious breakfast treat. I served mine with a bunch of fresh berries.
Blueberry Cheesecake Baked Oatmeal
Ingredients
- 200 G. Rolled Oats
- 2 Whole Ripe Bananas
- 60 G. Vanilla Protein Powder
- 420 Ml. Unsweetened Almond Milk
- 1 Tsp. Baking Powder
- 6 Tbsp. Fat Free Blueberry or Vanilla Greek Yogurt
- 120 G. Frozen Blueberries
- 1 Tsp. Maple Syrup
- 2 Oz. Neufchâtel Cream Cheese, Cubed
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x9" or 8x8" baking dish with non-stick baking spray; set aside.
- Mix together the 200 G. Rolled Oats, 2 Whole Ripe Bananas, 60 G. Vanilla Protein Powder, 420 Ml. Unsweetened Almond Milk, 1 Tsp. Baking Powder and 6 Tbsp. Fat Free Blueberry or Vanilla Greek Yogurt. (Alternatively you can reserve the yogurt to put on top of the oat mixture.)
- Pour the mixture into the prepared baking dish. (I used my immersion blender to blend the oats a bit because I like a smoother baked oatmeal.)
- Thaw and warm the 120 G. Frozen Blueberries with the 1 Tsp. Maple Syrup in a small microwave bowl then spoon over the top of the oat mixture.
- Drop the cubed pieces of 2 Oz. Neufchâtel Cream Cheese around over the top.
- Place into the oven to bake for about 45 minutes or until the edges are browned and the middle is set.
- Once done, remove from the oven and allow to cool slightly before cutting into 6 pieces to enjoy right away or store in the fridge to easy breakfast through the week!
