Indulge in a flavorful and creamy twist on traditional gnocchi with this Tomato Burrata Gnocchi. Pillowy potato gnocchi is smothered in a quick and easy to make tomato sauce, featuring sweet cherry tomatoes and plenty of garlic.

The dish is elevated with creamy burrata cheese, adding a luscious and decadent touch to every bite. This dish is super easy to make and requires just a few ingredients to make. It’s also meatless and if you use a vegetable based broth it’s also vegetarian all the way around. It’s perfectly filling and light while also keeping you full and satisfied. Tomato Burrata Gnocchi is great as a summer dinner option that is fine all on it’s own or as part of a meal in being served with a protein or even a cool crisp salad.

Enjoy a burst of flavors with this delicious Tomato Burrata Gnocchi dish. Perfect for a quick and easy meal that's full of Italian flair.

Ingredients

  • 1 Tbsp. Olive Oil
  • 10 Cloves of Garlic, Minced
  • 1 Pt. Cherry/Grape Tomatoes
  • 1/2 C. Reduced Sodium Broth (Vegetable or Chicken)
  • 1 (16 Oz.) Pkg. Potato Gnocchi, Cooked to Package Directions
  • 4 Oz. Fresh Burrata Cheese
  • Fresh Basil Leaves, Sliced

Instructions

  1. Heat the 1 Tbsp. Olive Oil in a large skillet over medium-high heat.
  2. Add in the 10 Cloves of Garlic and cook just until fragrant.
  3. Carefully toss in the 1 Pt. Cherry/Grape Tomatoes and 1/2 C. Reduced Sodium Broth; cook until tomatoes have softened and started to burst. About 10 minutes. Use the back of a spoon to carefully smush any tomatoes that have not burst on their own.
  4. Add in the 1 (16 Oz.) Pkg. cooked Potato Gnocchi and cook until it's all heated through.
  5. Once nice and hot, remove from the heat and tear apart the 4 Oz. Fresh Burrata Cheese to scatter around the dish.
  6. Serve right away with Fresh Basil Leaves to enjoy!
