Breakfast Fried Rice

We’ve probably all had fried rice before, but have you had breakfast fried rice? Who said you can’t have fried rice for breakfast? This fried rice starts out in the best of ways, with bacon! It’s also made all in one skillet. So first you cook the bacon, then you cook the eggs, and then it’s time for the rice. At the end you toss it all together and tada! Breakfast fried rice!

I did lighten this fried rice up by using a low sodium center cut bacon. I also used a brown rice instead of white or any other kind. And of course, low sodium soy sauce to boot. You could definitely use egg whites for at least some of the eggs, but I did not since - well eggs are expensive these days and I didn’t want to waste any yolks…

Japanese Egg Salad

It doesn’t get any more simple than this right here. This Japanese Egg Salad is made with just 4-5 ingredients and takes hardly any time at all to make and the end result is creamy, light, and delicious! So what makes this egg salad Japanese? The secret is in the mayonnaise! This egg salad uses kewpie, which is the Japanese version of mayonnaise. But, don’t worry! You can find it at most grocery stores.

American mayonnaise is made with whole eggs and white vinegar. Kewpie is made with egg yolks and rice vinegar or apple cider vinegar. Kewpie eggs up being sweeter and has less tang. It’s also a lot richer and creamer too!…

Crock Pot Japanese Onion Soup

We all know that soup that they serve at the hibachi style steak houses and how good it is for being something so simple. It’s one of the main things that my kiddo happens to look forward to when we go, so a lot of years back - way back in 2013, I decided to try my hand at making the soup at home and it was a success!

Instant Noodle Jars

Lunch time meal prep at it’s finest! I’ve been on it with jar salads lately, and no one can stop me except for myself. I did decide this week to do something a little different than salad in my jars though. This time I went with soup! Look, we all like those cup of noodles or instant noodles. But, they’re filled with a LOT of nonsense and even more sodium. So - we’re changing that today with making our own version!

These Instant Noodle Jars are fresh, full of flavor, and couldn’t be more simple to make. They’re better for you than the dried pre-packaged ones, annnd you get to control everything that goes into them; which is probably the best part of it all…

Tofu & Green Onion Wontons + Chili Broth

Ever made homemade wontons before? You totally should! They’re a little time consuming, but they are super easy to make and delicious too. These Tofu & Green Onion Wontons are meatless and depending on the base of stock you choose for the Chili Broth, they might be completely vegetarian too! The chili broth here doesn’t mess around either. It has a real kick to it. So if you aren’t big on spicy things, you may want to use a plain broth or lessen the amount of spice in here.

The broth here isn’t meant to be a soup, but more of an additional coating of flavor for the wontons to get to roll around in. Trust me, you need the broth here as it really adds a whole lot to the dish! It’s spicy, tangy, and perfect to pair with the neutral wontons themselves…

Air Fryer Cream Cheese Rangoons

When I decided to make my Egg Roll in a Bowl this week, I thought some cream cheese wontons would be the perfect appetizer to go with it. And since I’ve already done baked ones, why not try them in the air fryer? As it turns out, the air fryer is the perfect way to get some crispy and delicious cream cheese rangoons!

These crunchy cream cheese bits are great for dipping and dunking into your favorite asian inspired sauce alongside your favorite asian inspired meal. They’re quick and easy to make while also being kid-friendly and vegetarian! You could take them a step further and make them vegan too with a tofu cream cheese - which is something I have totally done before…
