Happy New Year! We’re kicking 2023 off with a twist on an American staple - pizza! Yes, you can have your pizza and eat it too. This Cheesy Cauliflower Pizza Casserole is the best of both the world of pizza and the world of eating better. It’s cheesy, saucy, easy to make, and delicious too! Another good part is that you don’t need many ingredients to make this casserole either.

You can also customize this casserole to suit your specific pizza tastes. I went with turkey pepperoni since it’s just as good as any pepperoni but has fewer calories, but you could also go with jalapeño, olives, sausage, etc…

Turkey Pot Pie & Stuffing Crust

Looking for ideas on what to do with your leftover turkey this year? Well, look no further! This Turkey Pot Pie & Stuffing Crust is here to save the day - and the leftovers! The filling for this pot pie starts off with some of the usual suspects; cooked turkey, onion, celery, and more veg! I used some frozen veggies since I don’t yet have Thanksgiving leftovers, but fresh could work too if you' do have leftovers from the big meal of the year.

Season this entire thing through and you’re golden. This whole thing is topped off with a stuffing crust. Okay - it’s not stuffing, it would technically be dressing since it’s not being stuffed into anything here. Anyway! This too you’ll want to be sure is properly season, and you’ll want to do it BEFORE you put the raw egg in it. Pastitsio

I’m just going to start this one out by saying that this recipe does take time. While it’s fairly easy to make, there are layering components that each take some time to put together. That being said, this dish is a great one. It tastes like all the time and effort that’s been put into it. So, what is Pastitsio anyway? It’s a Greek style of lasagna basically. The main difference between lasagna and Pastitsio is that Pastitsio is made with a different style of noodle and also with a béchamel sauce rather than ricotta. It’s layered a bit differently than lasagna too.

Now, I’ve never made a béchamel sauce, and even with this being my first time doing so I found it to be pretty easy to do and is very similar to any sort of roux based sauce. Vegetarian Breakfast Enchiladas

I was thinking the other day about enchiladas and I started to wonder… why are they always for lunch or dinner? Isn’t there a way to have them for breakfast? Enchiladas for breakfast? You bet! These Vegetarian Breakfast Enchiladas are made by rolling up vegetarian sausage, eggs, and cheese up in a tortilla and then baking them in a homemade gravy.

They’re absolutely delicious and perfect for making as a weekend breakfast or brunch. Plus, you can always make them ahead of time and then heat them for the final bake when you’re ready to enjoy. Vegetarian Cheeseburger Tater Tot Casserole

It’s been… a week. My kiddo is sick ahead of their final exams, decisions need to be made ahead of next year, and the world is on fire as far as I can see. It’s going to be a difficult next few days for the lost of us and I’m buckling up for this bumpy ride to continue. The very least that I can do is to have some good food on hand that’s easy and quick to prepare. So here we are. Vegetarian Cheeseburger Tater Tot Casserole.

I’ve made burger casseroles before, but none of them included tater tots and none of them were vegetarian, so we’re making progress here I think. Or at very least doing something a little different right? Right. So instead of being a noodle based casserole this one is… not. It’s vegetarian meat based and tater tot influenced? Sure.
