Beef Stew Casserole

Like I’ve said, it’s the end of the school year and quick and easy meals are what I’m about. This Beef Stew Casserole is going to be a new family favorite that I think has to go into general rotation. It’s filling and savory and is so easily put together. So what is Beef Stew Casserole anyway? Well, it’s exactly what it sounds like, beef stew in the form of a delicious casserole and doesn’t take hours on hours to make.

Everything you love about beef stew traditionally is here; beef, carrots, potatoes, celery, onion. All the goods. And to make this a casserole, it’s tossed together and baked with some tasty egg noodles! The noodles soak up a lot of the broth goodness as it bakes together and you end up with a delicious pasta dish that the whole family will love…

Chicken & Barley Stew

Now that Valentine’s Day is over, I get to look forward to St. Patricks day! Which strangely enough tis one of my more favorite holidays. With only Thanksgiving and Halloween being just ahead of it. I really really loved the Beef & Barley soup that I made before, so this time around, I thought I would try out something a little different and do a Chicken & Barley stew!

Pantry Pottage (Crock Pot & Instant Pot)

This Pantry Pottage became a traditional Thanksgiving Eve dinner many many years ago in my family. I think the original recipe was one that my mom had gotten off the local news station when I was still in high school. The idea behind the dish was to use up all the canned beans and vegatables from your pantry and toss them into a crock pot to cook up some fabulous and easy dish that would serve up a house of visitors.

Leftover Turkey Stew

It’s hard to know exactly what to do with leftover Turkey after Thanksgiving. I’ve made soups, dumplings, and a few other things in the past. This time though, I thought I would try my hand at making a sort of stew. It was surprisingly cold here on Thanksgiving this year, which is pretty strange. The past few years, we’ve had a super sunny Thanksgiving with a high of something near 80 degrees.

This year, we were in the 50’s, it was over cast, and misty. Normally I would say it was a ‘yucky’ day, but I always enjoy cool weather on the holidays that keeps everyone indoors and cozied up together. You know, encourages us to spend family time together. With it being chilly, I thought a stick-to-the-ribs hearty stew would be the best option for turkey usage!…

Oktoberfest Stew

Since we’re in the midst of Oktoberfest, I thought it was high time to create an Oktoberfest inspired recipe. Beer included! Don’t worry though, even with the beer in this stew, the whole thing is just about as guilt free as you can get with a meal.

You really do get all the flavors of Oktoberfest in one bowl here. Cabbage, sausage, potatoes, and of course… lager beer! I used an Oktoberfest beer, but a lager or any other ‘German’ beer would be perfect to use as well…

Beef & Barley Stew

It is cold, raining, and yucky here today. So, naturally… that calls for a hearty meal. Stew sounds about right to me! And with St. Patrick’s Day coming up soon, you know I’ve got to be sure there’s some Irish stew going on.

This beef stew is one of my new favorite dinners for cold weather. Which let me just say, isn’t a label that comes lightly. I haven’t worked with barley a whole lot before, so I wasn’t entirely sure what to expect. But, it was a wonderful addition to stew! There’s big chunks of beef, mushroom, vegetables, and of course that barley in there to help thicken it all up…
