Shepherd's Pie Soup

While it may not yet be time for shepherd’s pie, it is soup season. I had seen this really cool idea for a soup that was based on shepherd’s pie, so I decided to take that and make a more healthified version of it. This definitely gives you quite a lot of soup too and it’s filling and hearty to boot. It’s loaded up with all the things you will find in any standard shepherd’s pie, including meat, potatoes - mashed and otherwise, and plenty of other veggies.

This soup is full of flavor and definitely is what it’s set out to be. Shepherd’s pie in soup form! It’s also pretty akin to a baked potato soup as far as the consistency goes, and that’s probably due to half of the potatoes being mashed and the other half being left cubed to give a thickness to the soup and some added texture!…

Reuben Stuffed Potato Skins

With St. Patricks Day just around the corner, and a pantry full of potatoes that need to reused up relatively soon, I decided to make some reuben inspired potato skins. These Reuben Stuffed Potato Skins take some of the standard parts of a reuben and stuffs them into potato skins that are hearty and filling.

These potatoes start out being turned into shells with the potato scooped out and mixed with some dressing and then seasoned. After that they’re topped off with kraut, corned beef, and of course some cheese! They’re then baked to perfection and ready to eat in just a few minutes…

Chicken & Barley Stew

Now that Valentine’s Day is over, I get to look forward to St. Patricks day! Which strangely enough tis one of my more favorite holidays. With only Thanksgiving and Halloween being just ahead of it. I really really loved the Beef & Barley soup that I made before, so this time around, I thought I would try out something a little different and do a Chicken & Barley stew!

Irish Cream Chocolate Chip Cookies

As we get closer to March and to St. Patricks’s Day, I thought I would try my hand at making some chocolate chip cookies, but with a little bit of an Irish twist. These cookies here are made with some Irish Cream baked right in. And let me just tell you, they’re so sooo good!

The out edges are browned and have a little crisp to them while the insides are light, moist, and totally fluffy. And there’s just enough Irish Cream in there to get a hint of the flavor without it being over powering. Irish Braid Bread

With one of my favorite holidays coming up (St. Patrick’s Day) I thought it was about time to start rolling in a few fun takes on Irish dishes. One of our family favorite Irish bites has to be corned beef. It was actually one of the first meats that my picky-eater of a daughter would eat!

This Irish Braid Bread is sort of a take on an Irish infused Stromboli. It’s a croissant dough that’s wrapped (or braided) around corned beef, cooked spinach, red potatoes, and irish cheddar.
