This eye-catching appetizer or light meal combines the creamy goodness of avocado with the juicy sweetness of mango, all dressed up in a zesty dressing that’s bursting with flavor.

Ingredients

  • 1 Large Mango, Sliced Thinly
  • 1 Avocado, Sliced Thinly
  • 4 C. Baby Greens
Shallot Vinaigrette
  • 1 Shallot, Sliced Thinly
  • 1 Lemon, Juiced
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Tbsp. Honey
  • 1 Tbsp. Dijon Mustard
  • 1 Tbsp. Chopped Fresh Basil
  • 1 Tbsp. Chopped Fresh Cilantro
  • Salt & Pepper to Taste

Instructions

  1. Place the 1 Sliced Shallot and Juice of 1 Lemon into a small bowl together for about 10 minutes.
  2. Add in the 2 Tbsp. Extra Virgin Olive Oil, 1 Tbsp. Honey, 1 Tbsp. Dijon Mustard, 1 Tbsp. Chopped Fresh Basil, 1 Tbsp. Chopped Fresh Cilantro, and Salt & Pepper to Taste. Stir well to combine.
  3. Arrange the 1 Large Mango Slices and 1 Avocado Slices on a large plate (to serve family style) or a small plate (for individuals) and top with the 4 C. Baby Greens (or divide the greens evenly among the plates.
  4. Drizzle some of the liquid from the shallot vinaigrette over the mango and avocado and top the greens with marinated sliced shallots to enjoy right away.
