Blueberry Peanut Butter Sweet Potato

Allow me to introduce you to the stunning duo of Blueberry Peanut Butter Sweet Potato, where creamy meets berry bliss in a kaleidoscope of health and yum!

Ingredients

  • 1 Medium Sweet Potato
  • 2 Tsp. Olive Oil
  • 1 Tsp. Cinnamon Sugar
  • 1 C. Frozen Blueberries
  • 1 Tbsp. Peanut Butter
  • 1 Tsp. Chia Seeds
  • 1 Tsp. Honey

Instructions

  1. Bake the Sweet Potatoes: Pierce the Medium Sweet Potato all over with a fork and then coat it with the 2 Tsp. Olive Oil and 1 Tsp. Cinnamon Sugar. Wrap in foil.
  2. To Bake: Place in the oven to bake at 425 degrees F. for 40-50 minutes.
  3. To Pressure Cook: Place 1 1/2 C. water in the base of the instant pot. Lower the potato into the instant pot to set on the trivet. Close the lid and set the steam valve to sealed and cook for 30-40 minutes. Let the pressure release naturally or release the valve once done.
  4. Remove the potato from the foil and cut in half.
  5. Prepare the Topping: Microwave the 1 C. Frozen Blueberries for a couple of minutes then divide evenly among the potato halves.
  6. Assemble: Drizzle the 1 Tbsp. Peanut Butter over the top of both followed by the 1 Tsp. Chia Seeds and 1 Tsp. Honey divided evenly.
  7. Enjoy right away!
