Say hello to the Red Chile Breakfast Tostada—a dish that takes your morning meal from drab to fab with vibrant flavors and a guilt-free kick.

Ingredients

  • 1 (25 Cal.) Flour or Corn Tortilla (I used Sriracha Ranch tortillas.)
  • 1/4 C. Red Enchilada Sauce
  • 1 Whole Large Egg
  • 2 Tbsp. Refried Black Beans
  • 1 Tbsp. Guacamole
  • 2 Tbsp. Shredded Cheddar Cheese
  • 1 Tbsp. Pico or Salsa
  • Optional: Hot Sauce, Creamy Jalapeno, etc.

Instructions

  1. Get Your Tostadas Toasty: Preheat your oven or air fryer to 375 degrees F. Place the 1 (25 Cal.) Flour or Corn Tortilla on a baking sheet and lightly spray with cooking spray or drizzle with olive oil. Bake or air fry for about 5-7 minutes, or until they’re nice and crispy. Keep an eye on it—nobody likes a burnt tostada!
  2. Cook the Eggs: Place 1/4 C. Red Enchilada Sauce in a very small skillet and heat it over medium-high heat. Crack the egg into the skillet and cover. Lower the heat to medium and cook until done to your liking.
  3. Assemble the Tostadas: Spread the 2 Tbsp. Refried Black Beans and 1 Tbsp. Guacamole over the toasted tortilla. Top with the egg and enchilada sauce. Then add the 2 Tbsp. Shredded Cheddar Cheese and 1 Tbsp. Pico or Salsa.
