Super simple low-carb and gluten free egg cups that really only take about 3 ingredients and half an hour to make.

Ingredients

  • 6 Slices Deli Turkey (I used peppered turkey breast.)
  • 6 Whole Large Eggs
  • 6 Tbsp. Shredded Reduced Fat Cheese
  • Salt & Pepper

Instructions

  1. Line a cupcake tin with liners, paper or silicone and preheat the oven to 400 degrees F.
  2. Place a slice of turkey into the middle of each of the cupcake liners to make a 'well'.
  3. Crack an egg into the center of each turkey well.
  4. Sprinkle 1 Tbsp. of cheese over each egg.
  5. Season with salt & pepper and any other additional add ins that you may want. I put a slice of pickled jalapeño on top of each.
  6. Place the pan into the oven and bake for 20-25 minutes or until the egg whites are cooked through.
  7. Once done, remove from the oven and enjoy right away.
