Like I said, I’ve been asked for more lunch/meal prep box ideas so I’ve been hard at work churning a few of them out. This Brunch Box is generally my go-to meal prep box. Let’s face it, for a lot of us out there, we’re far too busy in the morning to actually sit down and eat breakfast. For me, my ‘breakfast’ time generally rolls in more so somewhere around 10 in the morning. Which, is really more of brunch time than breakfast or lunch. That’s one of the reasons this is dubbed, the Brunch Box.
Another reason is that theres a mix of sweet and savory things in here that you might more traditionally find at brunch. Especially the egg and the fruit.
Being as I tend to do my work outs in the morning time, I also like to load this Brunch Box up with a fair share of protein and some carbs. Both of which help to break-the-fast mid-morning and get me on through my day.
I love that I can whip up a few of these Brunch Boxes in a matter of minutes and have a meal prepped and ready to go in my fridge for a good while. Plus, snacky meals like this tend to be some of my favorites. Probably because it’s got so many of my favorite simple eats in it.
When I’m prepping this Brunch Box, I have learned that it’s best to keep the nuts out until the day you’re going to enjoy it. Otherwise, sometimes the nuts can absorb some of the moisture and aren’t as crunchy as they generally would be.
Other than that, this Brunch Box is pretty fuss-free!

• 1/4 C. Low Fat Cottage Cheese
• 2 Medium Strawberries
• 2 Chunks Fresh Pineapple
• 1/4 C. Fresh Blueberries
• 1 Whole Large Hardboiled Egg
• 2 Tbsp. Mixed Nuts
Directions:
Place everything in your container or dish of choice and enjoy!
If meal prepping this, I suggest leaving the nuts out of the box until the day you'll be eating it; this keeps the nuts nice and crunchy!
Store in an air-tight container in the fridge for 3-5 days.
