Milk & Cereal Cinnamon Rolls

In case you missed it, cereal milk is becoming a fairly popular thing. You know what I’m talking about, the milk that’s leftover in the bowl after enjoying cereal. It’s got little bits of cereal in it and is slightly sweetened and flavored by the cereal of choice. Yum…

When I decided on cinnamon rolls for breakfast, I looked through the pantry and saw some fruity cereal sitting there, waiting to be used. I knew exactly what to do. Milk and cereal cinnamon rolls!

I made these cinnamon rolls with my usual bread machine method with the high hopes that the fruity cereal couldn’t get lost in the dough, and it didn’t! They were also lightened up by using an unsweetened almond milk to make the cereal milk. And with sugar being swapped for a natural sweet, I was able to keep the calorie count down.

These cinnamon rolls turned out absolutely delicious with notes of fruity cereal and cinnamon roll goodness.

Homemade cinnamon rolls with a fruity cereal and milk twist! Bites of cereal and cereal bowl milk are mixed right into the dough and the filling of these cinnamon rolls before being topped off with a homemade frosting!

Prep Time: 1 Hour & 40 Minutes • Cook Time: 15 Minutes

The Skinny:
Servings: 14 • Serving Size: 1 Cinnamon Roll • Calories: 200 • Fat: 5 g • Saturated Fat: 3 g • Carb: 56 g • Fiber: 1 g • Protein: 5 g • Sugar: 4 g • Sodium: 117 mg

Ingredients:
Dough:
• 1 C. Unsweetened Almond Milk
• 1/3 C. Fruity Cereal
• 1 Tbsp. Butter
• 1 Whole Large Egg
• 2 Egg Whites
• 31/2 Tsp. Vanilla Extract
• 1/4 C. Sugar
• 1/2 C. Natural Sweetener
• 4 C. Flour
• 1/2 Tsp. Salt
• 2 1/4 Tsp. Yeast

Filling:
• 1/4 C. Melted Butter
• 2 Tbsp. Brown Sugar/Stevia Blend
• 1/4 C. Natural Sweetener
• 1/2 Tsp. Ground Cinnamon
• 1/4 C. Fruity Cereal

Frosting:
• 3/4 C. Powdered Sugar Substitute
• 1/4 Tsp. Vanilla Extract
• 1 Tbsp. Unsweetened Almond Milk

Directions:
Place the 1 C. unsweetened almond milk and 1/3 C. fruity cereal in a small bowl together at room temperature for 20-30 minutes.

Strain the cereal and milk to separate. Warm the cereal milk via method of choice.

Bread Machine: Place the ingredients for the cinnamon rolls into a bread machine in the order listed and set it to the 'dough cycle' setting.

No Bread Machine: If you do not have a bread machine, you can combine the hot water and yeast into a bowl and allow the yeast to activate and foam up. Once the yeast is active you can combine the remaining ingredients in the bowl of a stand mixer with the hook attachment or knead by hand. Spray a large bowl with non-stick cooking spray and place dough inside. Cover with plastic wrap and allow it to sit for an hour until doubled in size.

Once the dough cycle has ended or the dough has risen for its first time, remove the dough to a lightly floured surface and roll out into a large rectangle.

Mix together the 1/4 C. butter and 2 Tbsp. natural sweetener, 1/4 C. natural sweetener, and 1/2 Tsp. cinnamon and sprinkle out over the rolled out dough.

Top it with 1/4 C. fruity cereal.

Lightly spray two rounded 8 inch cake pans or a 13x9 with non-stick cooking spray and set aside.

Roll the dough into a tight, long, skinny log with the seamside down once done. Cut into 14 equal pieces. THIS WILL BE MESSY. I use floss to do this! Yes. Floss.

Place the cinnamon rolls into the prepared pan(s). Cover with plastic wrap or a tea towl and place in a nice warm place to allow them to rise for another 15-20 minutes.

Preheat oven to 350 degrees F. Once ready, remove the plastic wrap and bake the cinnamon rolls for about 12 minutes.

While the cinnamon rolls are baking, beat together the 3/4 C. powdered sugar substitute, 1/4 Tsp. vanilla, and 1 Tbsp. almond milk.

Once done, remove the cinnamon rolls from the oven and allow to cool slightly before drizzling the frosting over the top.

Garnish with more fruity cereal if desired and enjoy!
