Southwest Cobb Salad in a Jar

This is one spiced up salad! I’ve created it in such a way that it is perfect for being a jar salad; layered so that it stays fresh for 3-5 days in the fridge and is great to have on hand for a grab-and-go lunch that you can also enjoy on the go or not!

The whole idea for this salad is to layer it in such a way that it can sit stored in the fridge for a few days and is completely ready to eat as soon as you are. Everything is all included, even the dressing. The trick to it is the layering. All the wet stuff on the bottom and the dry stuff on top. Clever, right?

This salad has a spicy southwest flair to its cobb salad base of lettuce, carrot, egg, and cheese. It’s livened up with chipotle corn, spicy cheese, and smoky BBQ almonds. It’s good stuff all the way through. Really there isn’t much to lighten up here outside of your choice of dressing. I suggest a lightened up cilantro lime, or a chipotle ranch.

A meal prep salad with a spicy southwest kick! Make it ahead of time to have on hand and ready to grab-and-go lunch for busy weekdays.

Ingredients

  • 1 (11 Oz.) Can Chipotle Corn
  • 1/2 C. Light Chipotle Lime Dressing
  • 2 C. Shredded Carrot
  • 2 C. Halved Cherry/Grape Tomatoes
  • 4 Hard-Boiled Eggs, Halved
  • 1 C. Shredded Cheddar (I used ghost pepper cheese.)
  • 8 C. Chopped Romaine Lettuce
  • 1/4 C. Habanero BBQ Flavor Almonds
  • 4 Wide-Mouth Jars/Containers

Instructions

  1. Set out the 4 wide-mouth containers and layer accordingly.
  2. Divide the corn evenly among the jars, top each with 2 Tbsp. of the dressing, 1/2 C. shredded carrot, 1/2 C. tomatoes, 1 hard-boiled egg, 2 C. lettuce, a 1 Tbsp. almonds.
  3. Seal the lids and store in the fridge until you're ready to enjoy!
