Skinny Stuffed Mushrooms

I for one, love appetizers. I could make a meal alone out of small appetizers, both hot and cold. One of my favorites though, has to be stuffed mushrooms. My love of stuffed mushrooms goes back several years where I think my first try was at a little Italian restaurant.

I immediately, and without being much of a cook at the time, taught myself how to make them. Skip forward to today and I like to make them with a few minor changes to the original easy recipe that included cream cheese, bacon, and just a touch of Italian cheese. I mean, who doesn’t just love the combination of cheese, mushrooms, and bacon? You’d be crazy not to!

These Skinny Stuffed Mushrooms are truly one of my absolute favorite appetizers, and I’ve lightened them up in the best of ways. Using a reduced fat cream cheese and a low sodium center-cut bacon. And when I say stuffed, I mean stuffed!

I love these mushrooms so much that they were served as a main part of our dinner, along side a nice big Italian salad.

Delicious appetizer bites made by stuffing mushrooms with a cream cheese, herb, and bacon mixture. Lightened up and no one will ever guess!

Ingredients

  • 16 Oz. Mushrooms
  • 8 Oz. Neufchatel Cream Cheese
  • 1/4 C. Shredded Italian Cheese
  • 6 Slices Low Sodium Center Cut Bacon
  • 1 Tbsp. Dried Basil
  • Salt & Pepper to Taste

Instructions

  1. Preheat the Oven to 350 degrees F. and lightly coat the inside of the provided baking pan with non-stick baking spray; set aside.
  2. Clean and de-stem the mushrooms.
  3. In a medium mixing bowl, beat together the 8 Oz. cream cheese, 1/4 C. shredded cheese, 6 slices of crumbled bacon, 1 Tbsp. basil and season with salt and pepper to taste.
  4. Stuff the mixture into the center of the prepared mushroom caps.
  5. Place the mushrooms into the prepared baking dish and put into the preheated oven for about 15 minutes or until the top of the cream cheese is starting to brown.
  6. Once done, remove from the oven and transfer the mushrooms to a serving dish.
  7. Enjoy right away.
