Southwest Egg Bites (Instant Pot)

I've had a rough couple days of it. There were two recipes that I was SO excited about sharing, but... in the midst of testing them, they didn't turn out nearly as well as I had planned. They both tasted great. But, there was just something off about the process and the directions. ...Which means that I've still got some work to do.

So needless to say, it's been a couple of days in between recipes again. Which is not my favorite thing to do. I would much rather keep it fresh and new around here. But, I also don't want to put anything up here that I am not completely happy with. If I'm stressing over the cooking of a dish, that means you will be too! And that's just no good.

Naked California Club 'Sandwich'

A good long while back I was introduced to the 'Unwich' which is a sandwich... minus the bread and wrapped up in lettuce instead; keeping it a handheld portable sandwich style meal without the most of the carbs or the guilt. That's right, we're stripping the sandwich down to the nitty-gritty and I promise you'll thank me later for it.

One of my all-time favorite sandwiches is and always will be a club sandwich. So, that's my go-to for this naked unwich today. Who needs the bread anyway? I'm getting to keep all my favorite parts; bacon, turkey, cheese, and even avocado!...

Beet Tartare Stacker Salad

Okay, but for real... I had no idea what to call this. Beets have been a big part of my meal plans lately, and that's mostly because I've gotten them for a few weeks in a row now in my local farm-to-table box. And let me just say, I am a huge beet fan. My mom, however? She thought she only liked pickled beets. (Because that's the only way she's ever had them.)

So while she's been hanging around my place I've now managed to convert her by way of a beet pesto pizza and also that Winter Citrus Power Breakfast from earlier this week. One of these days she'll learn to trust me and my food! One of these days...
