I know that I’ve made mini cheesecakes in the instant pot before, but I still have some strawberry powder and strawberry cheesecake crumbs that I need to use up and for whatever ever reason it just seemed fitting to put them together in these Instant Pot Strawberry Shortcake Cheesecake Bites.

The way I was able to pack so much strawberry flavor into these cheesecakes was to use a strawberry powder. It’s basically freeze dried strawberries that have been ground down to a fine powder. Giant Instant Pot Pancake

It’s been… a week. And I couldn’t be more stoked that it’s Friday. Normally Friday doesn’t mean a whole lot to me since I’m technically ‘always working’, but today means that my kiddo will be out for school for the next week and I can’t wait for the bit of a rest! With Halloween this week, and Thanksgiving just around the corner, I thought it would be a good time to play around with a new cheesecake recipe. Desserts around the holidays are always a source of debate in our family. What to make, who’s making it, and when to eat it. I’ve got a handful of favorites to serve around Thanksgiving and Christmas, but I also like to come up with new ideas to throw out there. This Instant Pot Pecan Pie Cheesecake is definitely going in as a suggestion.

It’s pretty easy to make, especially for a cheesecake. The instant pot does the most of the work and quickly too. As it turns out, a pressure cooker is a really efficient way to make cheesecakes! Instant Pot Butter Chicken

If you’ve never had Butter Chicken before, you definitely need to try it. Butter chicken is a lot like tikka masala, but it more mild in the spice department. Tikka masala tends to have a bit more heat to it where as the butter chicken is the least spicy of these similar curry like dishes. Normally I go with tikka masala, but my kiddo wanted to try a non-spicy curry, so I decided to go with butter chicken instead. It’s great for a first timer.

This Butter Chicken is suuuuuper easy to make in the instant pot and is done in no time at all. Literally 15 minutes and you’ve got dinner ready to go. You get so much flavor packed into this dish that it’s hard to explain. It’s warm without being spicy at all and is amazing when served over jasmine rice…
