It happens almost every year around this time. It’s still pretty hot outside and I’m over here trying to entice the cooler weather by cooking up hearty winter sort of meals. And this Instant Pot Chicken & Dumplings is one of those! I love chicken and dumplings and I will literally accept any reason at all what-so-ever to make them for dinner. So when they were brought up in passing conversation a few weeks back? I knew what I had to do. Make chicken and dumplings!

This Instant Pot version of chicken and dumplings is SUPER easy to make and can be done with no fuss and no muss - all in the pressure cooker. So, the year has already started off a little rough for me, but at least the food is good. This Black-Eyed Peas & Cornbread Dumplings is as comfort food as it gets, and is truly one of the most tasty and delicious ways that I’ve ever gotten to eat black-eyed peas.

I used fresh black-eyed peas here because they cook fast and are perfect for this seasonal dish. That being said, canned ones or home-cooked would work too. I also used a vegetarian sausage because I have one in my house that doesn’t like traditional sausage for reasons. But any kind of sausage, pork, beef, or vegetarian will be just as good here!…

With one of my little brothers coming into town this weekend from Colorado, I thought I would be a good sister and surprise him with food. That’s usually what I do for my guests. Shocking, I know. I wanted to surprise him with some of his favorites. And Asian food has always been one of his favorites. And being as he could eat vegetarian at almost every meal if it were left up to him, I thought I would make him some vegetarian steamed dumplings.

Healthified Crock Pot Chicken & Dumplings

This is my healthier take on an old classic comfort food. I think the very first time that I had chicken and dumplings was at my grandmother's house with my dad when I was pretty young... elementary school still, I'm sure.

She cooked the soup up on the stove for a few hours and then tossed the raw dough into the pot. I thought she was crazy at the time, but after my first bite... I was in love.

Years later when I first started cooking, I dabbled with the infamous chicken and dumplings in the crock pot using canned condensed soups and biscuit dough. I'll be the first to admit that it was delicious, but a huuuge guilty pleasure! Full of preservatives and nothing good for you. Bleh!...

Grandma's Old-Fashioned Chicken & Dumplings

This year my family and I decided to do something a little outside of our usual for Christmas and for the first time in as long as I can remember, we went out of town for the holiday. While it was a bit of an undertaking to pack up everything involved and schlep it all the way from Texas to Oklahoma, I would have to say that the venture was well worth it. Even with the 5-hour trip home taking nearly 8 hours.

We were visiting my Uncle Johnnie and my Aunt Mildred who lives there. This is where I should probably explain that he is really my mother's uncle and more of a grand or great uncle to me - however that title would actually work is beyond me! He and I always seem to reminisce about one particular thing, my Great Grandma, and her amazing simple old-fashioned southern cooking. The sort you really don't come across anymore...

Steamed Vegetable Dumplings

I've been debating buying a bamboo steamer for a good long while now since I've been in full on wonton mode, and there isn't any better (or healthy) way to make potstickers or dumplings other than by steaming them. Needless to say, I finally broke down and got the steamer. I love it too because I can use it to steam other things too, not just dumplings.

I need something for steaming tamales too! So this was a good excuse to cover all my steaming bases.

The first thing I wanted to make with my bamboo steamer was some perfectly easy vegetable dumplings. These dumplings seriously couldn't be more easy to put together, and I'd like to think that after sealing up my fair share of wontons lately that I've become a lot more proficient with it...
