It’s finally here. We’re down to the finally 7 days before school lets out for the summer for my kiddo and I honestly thing that at this point, I’m more excited than she is. I tell you, summer is not going to go down without a fight this year. It's been well over 100 degrees here in Austin, Texas and so far we're still hovering in the upper 90's and often with a heat index of 106+ - yikes! It's hot, but nothing is quite as hot as this Quarter Pounder Burger Salad.

Let's face it, we all know what a 'quarter pounder' is. We don't even need to add the 'burger' part to that phrase and we'll all understand what's being spoken about. A quarter pound patty that's got lettuce, tomato, pickles, maybe some onion, and of course special sauce!

Just about everyone enjoys a good burger. Especially during the summertime when grilling season is in full swing! I don't know about you, but I always like to play around with burger flavors. Talk about a twist on classics, y'all! Today I've combined two of my most favorite things together; spicy thai peanut dressing and burgers! I know it sounds crazy, but just hear me out. These burgers are wholesome, full of flavor, and so juicy. They are perfect for summer cookouts, being light enough not to weigh you down with any richness.
