Naked Cheese & Spinach Enchiladas

It's getting hot in here. So take off all your clothes! Okay, well maybe not. But that's what the enchiladas in my house did. These enchiladas have no clothes on! Can you believe it? Tortilla-less enchiladas. Shame, shame! Naughty enchiladas. Actually, they aren't naughty at all! Some people call these 'zucchini boats' or stuffed zucchini, but I'm taking it a step further and just flat out calling them as they are. Naked.

Even though they are naked, they are ooey gooey cheesy and so very wonderful. I'm not mad at all that these guys are nude. The truth is, when I got my hands on some local zucchini and yellow squash this week, I knew this is exactly what I wanted to do with them with Cinco de Mayo just around the corner!...

Avocado & Egg Spaghetti Squash Boats

I want to start off by saying, my grandmother was very upset at me for making a spaghetti squash dish just days after she left. I was hissed at more than once for it. Sorry Neenaw, but the show must go on! The good thing is, this dish is so super easy that she can make it at home for herself and her husband to enjoy.

It's not winter, I know... but it seems like I always have to make at least one spaghetti squash meal during the summer. Even though its a winter squash, it seems like I crave it a lot more on hot days rather than cold ones. Perhaps it has something to do with the cooler toppings and bright sauces that I use on it...

Thai Chicken Zucchini Boats

My mom has this favorite pizza that is a seasonal specialty at a fairly well known pizza chain known for their 'take-n-bake' style of doing business. Okay, okay... so it's one of my favorite pizzas too!

It's a simple enough pizza; thin crust, thai sweet chili sauce, red onion, bell pepper, zucchini, and chicken. It's light and perfect for the oncoming summer months...

Skinny Spinach Bacon Alfredo Spaghetti Squash Boats

I've cooked a lot of spaghetti squash in the past year. It's a wonderful and fantastic alternative to noodles. I began to wonder though... how would this taste paired with an alfredo sauce instead of a red sauce?

No, surely not... I eventually dismissed the idea and forgot about it all together until just the other day when I saw the idea in motion.

But, as usual, I've got to make it more skinny, more healthy, more... drool.
