Cornbread & Chicken Nugget Cupcakes with Mashed Potato Frosting

Back-to-school is on the horizon, and being the mom of an ever growing little, I've found that there's a few tricks to getting kids to eat their dinner sometimes! One of the best ways is to make it fun. Yes, food can be fun and these Cornbread & Chicken Nugget Cupcakes are just that! Fun. It's a savory twist on a cupcake; letting the kids eat with their eyes first.

The base of the cupcake is made with a quick and easy cornbread muffin that's made by mixing together a self-rising cornmeal, cheese, and a creamed corn. This easy cornbread trick is one that I've been using for a couple of years now. And so far, it hasn't let me down yet! From there, the 'cupcakes' are topped with a potato and cauliflower mash 'frosting' which is also made with just a few ingredients…

My dad's birthday always falls around Father's day, which usually means... double the celebrations! Some of his most favorite beers are from the local Austin brewery, Infamous Brewing Company. I've had the honor of meeting the owner (Josh) and hanging out at the brewery a few times. They've won a LOT of medals for their selection of regular and seasonal beers. Their Pumpkin Massacre is a family favorite when it comes around in the fall.

Their brewery was literally right down the street from my parents when they lived over near the lake. Now it's a bit of a trek for either of us, so unfortunately we don't get to go there much anymore. The good news is that they sell Infamous beer in almost any store here around Austin and most of Texas too. If you can't find Infamous near you though, you could always use another beer of your preference for these cupcakes...

Healthified Meatloaf Cupcakes & Cauliflower Mash

It's been a super long time since I made these Meatloaf Cupcakes. As in... years. A lot has changed since then, especially my tastes and cooking style. The very first time that I made these, they were in the traditional manner. Plain old ground beef and mashed potatoes. Nothing fancy. Nothing 'healthified'.

Today though, I've lightened these up and made them a little more wholesome by adding in some veggies like carrots, and zucchini too! I also used an extra lean ground beef which I kept moist and full of flavor by adding in an egg and reduced sugar ketchup. The vegges also help to keep the lean meat from drying out. Of course, I also used a cauliflower mash instead of straight up mashed potatoes to get even more vegetable goodness in there.

These are packed. PACKED. Loaded up entirely with vegetables, and the best part is that you would never guess it!...

Skinny Raspberry Lemonade Cupcakes

So, I may or may not have gotten into a little bit of trouble with my mom to get this cupcake recipe here for you. Truth be told, my mom had started asking me about what sort of cupcakes were wanted for my birthday a week or two before it, but a whole lot of stuff went on and I never got an answer to her until we sat down together at my dad's birthday dinner.

She asked me again and I finally explained to her that I wanted to make my own cupcakes this year so that I could put it here. She was a little upset and thought it was completely strange that I wanted to make my own cupcakes. You see, she had her own little plan in mind, un un-benonced to me. Whoops!...

Skinny Margarita Cupcakes

I'm getting it done.

We have one more family birthday left this summer and then we're pretty much done for the year! Almost all of my immediate family has summer birthdays, so it get's a little punchy around here in the warmer months.

This past weekend we celebrated my mother's birthday in true Tex-mex style. We went out to eat a proper Tex-mex meal and I was left in charge of the cupcakes. A few months back my mom had specifically requested margarita cupcakes, so I immediately went to work with putting a proper recipe together for one.

What I ended up with was nothing short of one of the most amazing boozy cupcakes ever...

Braaaaaains...

I know, I know... Halloween is over. So why am I posting a recipe now for brain cupcakes?

Well, partially because I missed out on a lot of the pre-halloween hoopla due to a horrible virus that ran through my house in the weeks leading up to it. And... well also because one of my favorite shows is The Walking Dead.
