My daughter is pretty much obsessed with donuts. Seriously, once a week she gets to have donuts for breakfast. Usually it’s from a local donut place, but this morning I decided to take it up a notch. I’ve been working on the notion of a giant donut cake for a while. And if you follow me over on Facebook or Instagram you may have seen my most recent attempt.

I was sooo close, but it still wasn’t perfect. And I never want to share a recipe that I’m not completely in love with. Whether it has to do with the recipe itself or with the aesthetics of it all. This last time was a painful lesson with sprinkles and frosting. Today though? I got it all right!…

Skinny 'Homer Simpson' Donuts

What can I say? I’m inspired by a lot of things in life. Growing up through the 90’s meant a lot of watching The Simpsons. And anytime you watch the show, there’s like a scene with Homer eating a donut. The Simpson donuts are a classic vanilla donut with pink frosting. So, I took one of my old favorite recipes and reworked it into this riff on Skinny 'Homer Simpson' Donuts!

Needless to say, the house smelled heavenly this morning. It’s been a good bit of time since I baked any donuts. So my little girl was tickled pink when she got her heart-shaped donut fix this morning. Even though I don’t think that she fully appreciated that they were ‘Simpson’ donuts…

Skinny Rainbow Unicorn Donuts

Unicorn fever is spreading, and I'm loving every second of it. Now there's even chatter about Mermaids and Dragons too! However, nothing is quite as whimsical or magical as the mysterious Unicorn. Except maybe these donuts. They are perfectly colorful and special in every way; from their fun vibrant colors to their lightened up and magically guilt-free batter. These donuts are sure to be a spectacular rainbow hit!

My daughter's face when she got home from school and saw these on the counter waiting for her, was pretty priceless. That says it all right there. There is not much that will put a smile on anyone's face like the magic of Unicorns will. Seriously. How can you look at these and not smile? Go on. Try it. I dare you!...

This New Year has gotten off to a great start around here, full of new friends, new family, and lots of fun. As always for the past few years, a better diet is always towards the top of my list. While I feel that I have a pretty good handle on that, there's always room for improvement and trying new things, of course!

Once a week we have a 'donut' day here at the house, which I tend to avoid like the plague. I'm the mother of a rather active almost five year old girl. (I mean... what little one isn't active, am I right?) Around here, mornings are always full of chaos and about 75% of the crazythat will go along with the day. It seems like everything is a struggle. Getting dressed, brushing teeth, brushing hair, everything. It's just an all out stressful situation!

Recently, I started in with a 'chore chart' that seems to make the mornings a bit easier. For each 'chore' she does on her own to get ready in the morning, she gets a star sticker. At the end of the week if she has accumulated enough stars, she gets a special treat or prize.

Another thing that helps with my morning routine is always starting my day off with a nice big cup of coffee. It's that morning pick-me-up that I absolutely need to get through it all. Yeah, you know what I'm talking about. Once I get my little one dressed and settled in (whether at home or pre-school), I like to indulge in a second cup of coffee for a bit of much needed "me time".

Today I'm using McCafé coffee in yet another way to help me get through my day while indulging in a better-for-you treat at the same time! After all, what goes better with coffee than donuts anyway? Now you can enjoy both together in one glorious bite...

Skinny Vanilla Bean Donuts

My daughter is a donut fiend. And even though I've been trying to avoid my oven while in the midst of summer... these vanilla wonders were absolutely worth it.

Originally I wanted to use actual vanilla bean in these bad boys, but... they're a little pricey (nearly $10 for one bean!) Needless to say, I opted for vanilla bean paste instead ($9 for a large jar.) I've never used vanilla bean paste before and I generally buy the cheapest vanilla extract that I can find, but I remember reading somewhere about the magic of vanilla bean paste.
