Rainbow Soda Cake

Another continuation of rainbow inspired eats and treats geared towards PRIDE month! This fun and vibrant rainbow cake is made with literally just a handful of ingredients and fairly little hands on time. This cake uses one of the oldest tricks in the book as far as cake mixes go, and that’s simply using sparkling soda with the mix and nothing more!

That’s right. You can make a cake with a box of mix and a can of soda. Pretty impressive, huh? It’s so super easy to do too! Outside of that, you divide the batter and color it accordingly. I went with the rainbow colors of the PRIDE flag, but you can use whatever colors you wish…

Rainbow Pride Donuts

Continuing with Pride month and wonderful rainbow inspired eats and treats! I’m no stranger to colorful donuts, but these Rainbow Pride Donuts are the brightest and boldest ones I’ve made yet. It’s a happy coincidence that my donut pan is also heart shaped, which made these Pride donuts just that much more perfect!

To keep these donuts lightened up, I of course baked them. I also used less sugar and threw some whole wheat white flour in there. Other than that, these rainbow beauties are fairly standard to any other baked donuts. Except for being full of Pride and color!…

Funfetti Sugar Cookie Cake

My daughter’s birthday is literally just around the corner. I can’t believe I’m about to have an 11 year old. Even so, I’m doing my very best to take this birthday extra special since, well, times are still rather strange in the world. One of the things I’m doing to make her day even more magical is making cake! Okay, so… not cake-cake. She had pretty specific instructions on wanting a cookie cake again this year. Which I’m totally down for.

Giant Chocolate Chip Unicorn Cookies

Immediately after I made my last batch of GIANT cookies, my kid was already asking me to make some more. Of course, I didn’t want to do them exactly the same, so today I decided to go with just colorful sprinkles and a variety of chocolate chips. That’s right, a variety. Big, regular, small. Some dark, some semi-sweet.

The end result was some more amazingly delicious GIANT cookies that had something different in every bite. Some bites were full of chocolate, others of sweet candy sprinkles, and then others were a delicious cookie.
