Just because the holidays are over doesn't mean that the entertaining has stopped. At least, that's how it is around my place. I like to think of my house as the central hub. The neutral territory. THE place to be. At least once a week there is something going on and I've got a house full of people.

My daughter and I are usually outnumbered by the boys too. Even when my mom comes to visit, if you're counting the animals, we're still outnumbered by at least 2 to 1. So more often than not, when there are people over, I like to stick to food that I know the menfolk will enjoy while also trying to keep my womanly figure. That's where these Armadillo Eggs come in...

Skinny Juicy Lucy Meatballs

Remember when I made those fantastically cheesy Healthified Juicy Lucy Burgers? Yeah, well they now come in meatball form! And just in time for gameday too. For these meatballs, I took my favorite cocktail meatballs and those Juicy Lucy Burgers and fused them together to make one epic appetizer. They're easy to make, full of flavor, and what could be better than a gooey cheesy stuffed meatball?

Not a lot.

So just to be clear, these are not your average Italian style meatball. Oh, no. These are an americanized modge-podge if ever there was one. I do have a more traditional stuffed meatball if that's more of what you're looking for (also made in the crock pot along with a sauce.)...

The Big Game is getting ever nearer and I am super excited, just as I always am! Game day food is a huge part of my love of sports. I mean... let's face it, who doesn't like finger-food style stackable grub? I feel like I've been lacking a bit this year with my game day offerings, so it's time for me to get back into the swing of it!

One of my favorite and must-have things for a game day spread in my house is dip. Cold dip, hot dip, any sort of dip that you can scoop up and nosh quickly while cheering on your favorite team. It's not like you can have your hands full of forks and plates in the midst of all the hoopla that tends to come along with uber fans...

I gotta admit, my lunch today was pretty amazing. As you can see.

I've said it before, and I'll say it again... potatoes always seem to get a bad reputation. Maybe it's because the vast majority of people that eat them always go for the greasy fried versions of potatoes. But, honestly there's a lot of good packed into these things!

Potatoes are a good source of B6, potassium, vitamin C, and fiber! Oh, and did you know that they are actually fairly low in calories? A whole spud is about 160 calorie on average, not too shabby.

Plus, they're filling enough to keep you satisfied and energized to get through your day, which is something that I desperately need today!...

A few weeks back I was sent a Wilton Armetale Casserole/Baker, at no charge to me, to try out and give my honest opinion on. Since today starts up March Madness, I wanted to do something inspired by Tailgating!

Of course, there were the usual suspects... but, I wanted to do some dessert since I feel that it's a severely overlooked additional to any proper Tailgating experience.

Since I wanted the dish to be Tailgating friendly it had to be something that could be prepared a few hours in advance, was versatile, and could be cooked on the grill just as easily as it could be in the oven...
