5 Ingredient Skinny Summer Vegetable Dip

It's getting warm here in Texas, though I'll be the first one to say that so far we've had a perfectly mild summer. Usually by now we are well into 100+ degrees days, and so far we've barely broken past the 90's. No, that's not a complaint either! It's these perfect summer days that I love to spend out in my backyard entertaining. Whether that means my little family or the whole lot of us.

No matter who's around, it's always about 'what to eat' and this 5 Ingredient Skinner Summer Vegetable Dip is the perfect spread! I've loaded this dip up with bell pepper, jalapeño (for taste - not heat), sweet summer corn, and olives! I know, bare with me, it might sound like a rather creative and interesting combination... and it is! It's completely amazing and full of flavor. You'll fall in love from the first taste.

I decided to pair this tasty dip with more even fresh vegetables and Dare Crackers! Whether prepping for an extravagant party or an impromptu get-together, Dare’s variety of crisp crackers are sure to make each bite better. I served both Dare Cabaret and Dare Breton Original crackers here because I just couldn't decide between the two great flavors. 

Dare’s complete collection of mouthwatering crackers are loaded with crunch and packed with flavor to make inventive summer entertaining better. I definitely put these crackers to the test, and they were perfect to stand up to this thick and veggie-full spread; adding flavor and texture to each bite!

Not only do I enjoy using this dip for my backyard entertaining, but it also makes for a great addition to lunch or for a snack too. Plus, this stuff goes really fast in a group setting and when I make it for myself that means I get it all. Haha!

This dip is easily made vegan by swapping out cream cheese for tofu 'cream cheese'. And of course, I'll always recommend making your own Homemade Dry Ranch Seasoning too.

The Skinny:
Servings: 12 • Size: About 1/4 Cup Dip • Calories: 96 • Fat: 7.3 g • Carb: 3.6 g • Fiber: 0.2 g • Protein: 1.4 g • Sugar: 0.5 g • Sodium: 406.8 mg

Ingredients:
16 Oz. Neufchatel or Tofu 'Cream Cheese'
1 Pkg. Dry Greek Yogurt Ranch Mix or 2 Tbsp. Homemade Dry Ranch Seasoning
1 Red Bell Pepper, Seeded & Diced
1-2 Jalapeños, Seeded & Diced
2 Oz. Can Diced Olives, Drained

Directions:

In a large bowl, beat together the 16 Oz. Neufchatel or Tofu 'Cream Cheese', and 1 Pkg. Dry Greek Yogurt Ranch Mix or 2 Tbsp. Homemade Dry Ranch Seasoning until smooth and creamy.

Add in the bell pepper, jalapeño, and 2 oz. diced black olives; stir until just combined.

Over stirring will cause the cream cheese mixture to turn pink!

Serve right away or store in an air-tight container in the fridge for 3-5 days.
