This Air Fryer Margherita Chicken is naturally gluten free, keto friendly, and low carb. I paired mine with some air friend asparagus for a perfectly rounded out meal that was tossed together in no time at all. In fact, it’s been on the menu for two weeks in a row so far!

Juicy chicken breasts are smothered in flavorful pesto sauce, topped with melty mozzarella cheese and fresh tomatoes, then air-fried to perfection.

Ingredients

  • 1/2 C. Halved Cherry Tomatoes
  • 1/2 C. Packed Sliced Fresh Basil Leaves
  • 1 Tbsp. Fresh Lemon Juice
  • 2 (1/2 Lb. Total) Boneless Skinless Chicken Breasts, Pounded to 1" Thick
  • 1 Tbsp. Olive Oil
  • 1 Tsp. Hot Sh!t Seasoning
  • 1/4 C. Pesto
  • 2 Slices Mozzarella or Provolone Cheese

Instructions

  1. Place the 1/2 C. Halved Cherry Tomatoes, 1/2 C. Packed Sliced Fresh Basil Leaves, and 1 Tbsp. Fresh Lemon Juice into a medium bowl and toss together.
  2. Put the 2 Boneless Skinless Chicken Breasts, 1 Tbsp. Olive Oil, and 1 Tsp. Hot Sh!t Seasoning into a ziplock bag and toss to coat the chicken evenly in the oil and seasoning.
  3. Transfer the chicken to the air fryer and cook at 400 for 10 minutes, then flip the chicken over and cook for another 10 minutes or until cooked to temperature.
  4. When the chicken is done, remove it from the air fryer and top each with 2 Tbsp. Pesto. Followed by 1 slice Mozzarella or Provolone Cheese.
  5. Place back in the air fryer and cook for 3-5 minutes or until the cheese has melted.
  6. Once done, remove from the air fryer to plate. Top each with the tomato mixture divided evenly and enjoy right away!
