Breakfast Biscuit Pie

Sometimes you just need something a little different to help shake things up a bit and keep life interesting. Especially during this part of the year when we’re all just trying to get through to summer break at this point. This Breakfast Biscuit Pie is made with a lot of the usual breakfast subjects, but in a new and fun way! I would say this Breakfast Biscuit Pie is basically a cross over of a quiche and a breakfast casserole.

The main difference here is that the eggs are pre-cooked BEFORE being baked, which means less time in the oven and you get to season the eggs to your liking before the final bake too. This is also made with just a few very basic ingredients, probably most of which you already have on hand.

Another great thing about this Breakfast Biscuit Pie is that it reheats really well, which means its great for making ahead of time and having on hand for breakfast for a few days. Just cover it and keep it in the fridge for a quick zap in the microwave to enjoy it all over again!

This breakfast pie is something between a pie and a quiche! Sausage, egg, and cheese that are topped off with some biscuits and baked up in no time.

Ingredients

  • 1 Green Bell Pepper
  • 1 Lb. Turkey Breakfast Sausage
  • 8 Whole Large Eggs
  • 1/2 C. Reduced Fat Cheddar
  • 7.5 Oz. Tube Refrigerated Biscuit Dough (10 Count.)

Instructions

  1. Preheat the oven to 350 degrees F. and lightly coat the inside of a pie dish with non-stick cooking spray; set aside.
  2. In a large skillet, cook the 1 green bell pepper and 1 lb. sausage over a medium-high heat until the sausage is cooked through and the bell pepper is tender.
  3. Add in the 8 eggs and continue to cook until done.
  4. Remove from the heat and stir in the 1/2 C. cheddar.
  5. Transfer the mixture to the prepared pie pan.
  6. Place the biscuit dough atop the sausage and egg mixture and place in the oven to bake for about 25 minutes or until the biscuits are golden brown and cooked through entirely.
  7. Once done, remove from the oven and enjoy right away!
