Smothered Chicken Burritos
Ingredients
- 4 Large Low Carb High Fiber Burrito Tortillas
- 1 Lb. Boneless Skinless Chicken Breast
- 1 (10 Oz.) Can Diced Tomatoes with Green Chiles
- 2 Oz. Diced Green Chiles
- 1/2 Tbsp. Brown Sugar
- 1 1/2 Tsp. Chili Powder
- 3/4 Tsp. Salt
- 1/2 Tsp. Liquid Smoke
- 1/2 Tsp. Hot Sauce (Tobasco, etc.)
- 1/2 Tsp. Cumin
- 1/2 Tsp. Garlic Powder
- 1/2 Tsp. Onion Powder
- 1/4 Tsp. Paprika
- 1/4 Tsp. Oregano
- 1/4 Tsp. Pepper
- 1/4 Tsp. Cayenne
- 1 1/2 Tsp. Butter
- 1 1/2 Tsp. Flour
- 1 C. Reduced Sodium Chicken Broth
- 1/2 Tsp. Cumin
- 1/2 Tsp. Salt
- 1/8 Tsp. Pepper
- 1/4 C. Plain Fat Free Greek Yogurt
- 2 Oc. Diced Green Chiles
- 1/4 C. Shredded Cheese
Instructions
- Preheat the oven to 375 degrees F. and lightly coat a baking sheet with non-stick spray, foil, or a silicone baking mat.
- Shred the 1 Lb. Cooked Chicken Breast between two forks or by using the paddle attachment on a stand mixer.
- Stir together with the 1 Can Diced Tomatoes with Green Chiles, 2 Oz. Diced Green Chiles, 1/2 Tbsp. Brown Sugar, 1 1/2 Tsp. Chili Powder, 3/4 Tsp. Salt, 1/2 Tsp. Liquid Smoke, 1/2 Tsp. Hot Sauce, 1/2 Tsp. Cumin, 1/2 Tsp. Garlic Powder, 1/2 Tsp. Onion Powder, 1/4 Tsp. Paprika, 1/4 Tsp. Oregano, 1/4 Tsp. Pepper, and 1/4 Tsp. Cayenne; set aside.
- Set out the 4 Large Low Carb High Fiber Burrito Tortillas and scoop a full cup of the chicken into the middle of each.
- Fold and roll the tortillas up in burrito style.
- Set the burritos onto the prepared baking sheet and give them a light spritz of non-stick spray.
- Place in the oven to bake for about 30 minutes or until the tops are turning golden brown.
- While the burritos are baking, melt the 1 1/2 Tsp. Butter in a sauce pan over medium heat.
- Whisk in the 1 1/2 Tsp. Flour and cook for a minute or two.
- Add in the 1 C. Reduced Sodium Chicken Broth, 1/2 Tsp. Cumin, 1/2 Tsp. Salt, and 1/8 Tsp. Pepper. Continue to cook until slightly thickened.
- Remove from the heat and add in 1/4 C. Plain Fat Free Greek Yogurt, 2 Oc. Diced Green Chiles, and 1/4 C. Shredded Cheese. Stir together until the cheese is melted.
- Once the burritos are done, remove them from the oven and place on plates.
- Divide the cheesy sauce evenly among the burritos.
- Top with green onions if desired and enjoy right away!
