Ground beef, seasoning, sauce, corn and black beans come together to be topped off with tater tots and more cheese. This dinner option is perfect for a busy week night and can even be made ahead of time for a quick reheat later.
I lightened this casserole up by using an extra lean ground beef and my own homemade taco seasoning. I like to use a reduced fat shredded cheese and top it all off with some chopped green onions, plain greek yogurt, or even some avocado or guacamole!
This casserole feeds a crowd too. It fed our house for two whole meals and I didn’t find that a side was needed since this is basically everything you need all in one dish.

• 1 Lb. Extra lean Ground Beef
• 1 Onion, Chopped
• 1 (16 Oz.) Bag Frozen Corn
• 1 (14.5 Oz.) Can 'No Salt Added' Black Beans, Drained & Rinsed
• 1 (4 Oz.) Can Sliced Black Olives
• 1 (4 Oz.) Can Diced Green Chiles
• 2 Tbsp. Taco Seasoning
• 2 Garlic Cloves, Minced
• 1 1/2 C. Shredded Mexican Cheese
• 1 (16 Oz.) Pkg. Frozen Tater Tots
• 1 (10.5 Oz.) Can Red Enchilada Sauce
Directions:
Preheat the oven to 375 degrees F. and lightly coat the inside of a 13x9” baking dish with non-stick cooking spray; set aside.
Place the 1 Lb. ground beef and 1 chopped onion into the base of a large pot and cook until the meat is browned and the onions are tender.
Add in the 16 oz. frozen corn, 1 can black beans, 1/2 the can of enchilada sauce, 4 oz. black olives, 4 oz. green chiles, 2 Tbsp. taco seasoning, and 2 garlic garlic cloves.
Bring it all to a simmer over medium-high heat until warmed through.
Remove from the heat and stir in 1 C. of the cheese until melted.
Pour the mixture out into the bottom of the prepared pan.
Top with the tater tots, the remaining half of the enchilada sauce, and 1/2 c. remaining shredded cheese.
Cover with foil and place in the oven to bake for about 45 minutes or until the cheese is melted and sauce is bubbling.
Once done, remove from the oven and serve right away.
Top with green onion, avocado, or even plain fat-free greek yogurt!
