St. Patrick’s Day is coming and being as it’s also my dad’s birthday, I thought there would be no better time than now to make a delicious Irish take on a chocolate cake. What makes it Irish? Irish whiskey, of course! That’s right, this homemade from scratch chocolate cake has Irish whiskey baked RIGHT IN to the cake itself.

One Pot Irish Potato Leek Soup

It’s been pretty cold and yucky here for the past few days and a nice rich bowl of some potato soup just sounded like the absolute perfect thing for dinner. A few weeks back my brother tried his hand at making a potato leek soup for dinner, and while it was good, there were a few tweaks that I wanted to make. Having two cooks in one house is a blessing and a curse.

Reuben Salad + Homemade Thousand Island Dressing

Now that Valentine’s day is over, we can move onto the next holiday on the list. St. Patrick’s Day! I say it every year, St. Patrick’s Day is one of my top three holidays. Partly because I’m Irish and partly because it’s my dad’s birthday! Being as my little one strangely loves corned beef, I decided to make some WELL ahead of time, and honestly I’m not sure why I don’t make it more often through the year.

Being as I’m a Irish girl, leading into the month of March is one of my favorite times of year. The weather usually starts warming up and I get to play around a lot more with Irish staples! Skinny Bacon & Cheddar Irish Soda Bread

There is one thing that I absolutely MUST make every year towards the end of February and the beginning of March, and that is Soda Bread. Again, it’s a nod to my Irish roots. Irish soda bread is a yeast-free bread that is quick and super easy to make. Really, guys… it’s almost fool-proof. Almost. Trust me, I know because baking tends to scare the pants off of me.

I used my original Healthified Irish Soda Bread as a base for this Bacon & Cheddar variation. This time around I used whole wheat flour to get a more golden color at the end, and of course… loaded this bad boy up with plenty of cheese and bacon goodness…

Crock Pot Pumpkin Spice Oatmeal (Instant Pot too!)

Originally when I made this oatmeal, I had pretty recently posted a Skinny Baked Pumpkin Pie Oatmeal, but these two oatmeals are pretty far apart in the realms of texture and preparation. Plus, I’ve added in new instructions so this oatmeal can be made in an instant pot (pressure cooker) in under thirty minutes!

As usual, I've been running around like a crazy woman and I really needed a pick-me-up this morning to help boost me through the day. Back when I first made this recipe in 2013, my dear little girl had been sick for well over a week and only the day before was diagnosed with both a sinus infection and bacterial pneumonia. That was a tough time!…
