Breakfast Waffledilla

Look, I don’t know - I love my waffle maker and I am always trying to come up with new and fun ways to use it that aren’t just standard waffles. This Breakfast Waffledilla is definitely that. It combines all the best parts of a breakfast quesadilla and stuffs it into waffle form. That’s right, this is full of bacon, egg, and cheese goodness and only takes a few minutes of hands on time.

I added some jalapeños to mine, but some fresh pico would be another good addition. There were really only a few things I could do to this to keep it lightened up, and that mostly involved the tortillas. Giant Pizza Roll

This Giant Pizza Roll is crazy easy to make and is a super simple way to get creative with your pizza. It’s as simple as rolling out some pizza dough, par baking it, topping it with your favorite pizza toppings and then cutting and rolling it up into a giant pizza roll. It definitely is a fun, new, interesting way to get to nom on some pizza!

Really and truly, it doesn’t get much easier than this. You could go with whatever pizza dough you fancy, but I just grabbed a tube of refrigerated dough to keep it simple today. I also kept it really simple with standard pepperoni and cheese, but you could add your favorites in like sliced olives, mushrooms, or any other pizza toppers…

Healthified Chicken & Mash Bowl

Okay, so there's this fried chicken chain restaurant that honestly I couldn't tell you the last time I ate at. They have these horribly amazing 'famous bowls' that I used to get back when I was younger and more naive when it came to food.

Fast-forward to today and I don't think that I could stomach sitting in that restaurants parking lot, much less eating anything that came out of it. Never mind that particular 'famous bowl' is nearly a whopping 800 calories and full of who-knows-what.

Cookie Monster Cookies

Everything in moderation, right? These cookies are definitely a lot more decadent than I’m used sharing and enjoying, but I love a good big cookie. And I love anything cookie monster-esque. So, when I saw the original idea for these stuffed cookies, I just knew that I was going to have to do something similar and in a little bit more of a lightened up way, at least as much as I could manage anyway.

I did stuff my cookie monster cookies just a little bit differently and made a few sways to healthify them in my own way. These cookies start out with a from scratch blue chocolate chip cookie dough that is then stuffed with regular chocolate chip cookie dough AND an Oreo cookie…

Healthified 'Lofthouse' Soft Sugar Cookies

I've basically taken that original tried-and-true recipe and trimmed it down as best I could without losing the amazingness of that cookie.

The first thing I did was swapped out some of the regular flour for some whole wheat white flour. If you're going to be bad, you may as well get some good in there too! At least you can say you had some whole wheat, right?

I also substituted in some sweetener for about 1/3 of the sugar originally called for. Why? Well, if you can get away with less sugar, then why not? For the cookie dough, I used a light butter rather than full fat. Again, if you can get away with it... do it!

I made a few other minor changes as well, and still ended up with a perfectly light and decedent cookie that has over 50 calories less per serving than it's store bought counter part. Plus, I know exactly what in these cookies since well... I'm one that put it all there!

I'm telling you, they taste almost exactly like the original…

Healthy & Easy Kid-Friendly Spaghetti Sauce

I'm calling this kid friendly spaghetti sauce because, I generally like to put actual onions and garlic into my spaghetti sauce. However, my little one would turn her nose up at that in a heartbeat, and seeing as how she specifically requests spaghetti every week, I figured that I ought to oblige her with something that would suite her desires!

Besides, who doesn't enjoy eating like a kid again? In my mind, that's one of the perks of being a parent; reliving all the things that you loved when you were growing up!

Though my mom was more of a Hamburger Helper sort of spaghetti maker.

She swears by Hamburger Helper 'Spaghetti' to this very day. Ugh…
