Taco Salad Splits

It’s cold outside! It’s so cold and frosty that school was delayed, and while it’s cold and not much else to do, my creative juices always kick into high gear. Today I decided to make some cute Taco Salad Splits with the bonus time that I had gifted to me by the weather.

So what’s a Taco Salad Split? Well, it’s a taco take on a banana split. Don’t worry, I’m not making tacos with bananas. But I am making these taco salads LOOK like banana splits.

Here's another 'take-out fake-out' today for one of my old favorites. It’s no secret that I'm a big fan of baking things as opposed to most other cooking methods out there. With September being National Cholesterol Awareness month, and the fact that I'm not all about frying, I put my noodle to work to come up with a better-for-you baked version of Southwest Egg Rolls. So, with a little research and a lot of love, I'm pretty sure I got this one 100% right.

Egg roll and wonton wrappers have been a pretty big part of my kitchen play time lately. I just love how versatile they are. Plus, they are lower in calories than most other doughs. So, to keep these Southwest Egg Roll better-for-you, I made a few careful swaps. First, I used chicken breast as a leaner cut of meat. As a second swap, I used a reduced fat shredded cheese instead of a full-fat version. And finally, I used Mazola Corn Oil on the egg rolls and also in the vinaigrette dip!

The Best Chili (Instant Pot, Slow Cooker, and Stove Friendly!)

I was thinking about this just the other day, about how always in summer here in Texas we end up with a few ‘chilly’ days. Okay, by chilly I mean that it’s not even 70 degrees here today. Which, if you know anything about Texas summers, you know that it’s full of 100+ degree days and a plethora of issues that go along with that.

Today though? We had a storm roll through and as I sit here, it’s a ripe old 69 degrees and thundering outside. You better believe that I’m content with that and with allowing my air conditioner the much needed rest. Even so. I’m going to make use of the weather and enjoy some chili!…

Sailor Stew

I’ve made this stew a couple of times before, and mostly just for testing purposes. Sometimes it takes more than one run to get these things just right. But, I can honestly say that I haven’t minded the process with this one!

The first time I made it, I did so in the Instant Pot. It turned out well enough, but I really wanted this to be a stew that everyone could cook. Not just those with a pressure cooker. I also ended up adding in some potatoes and carrots to make this a more veggie-ful dish. Those veggies, along with the beans in there, really makes this a hearty meal all on it’s own…

Southwest Egg Bites (Instant Pot)

I've had a rough couple days of it. There were two recipes that I was SO excited about sharing, but... in the midst of testing them, they didn't turn out nearly as well as I had planned. They both tasted great. But, there was just something off about the process and the directions. ...Which means that I've still got some work to do.

So needless to say, it's been a couple of days in between recipes again. Which is not my favorite thing to do. I would much rather keep it fresh and new around here. But, I also don't want to put anything up here that I am not completely happy with. If I'm stressing over the cooking of a dish, that means you will be too! And that's just no good.

That's why today I woke up bright and early and reverted back to one of my current FAVORITES. Egg bites…
