I've made a LOT of birthday style eats and treats before. What can I say? My kiddo and I love rainbows and sprinkles. And there's no time like the month of June to bust our the rainbow sprinkles and cake flavored amazingness. It’s pride month AND we I have a lot of family birthdays this month too! This is an older recipe, so I decide to go back and revisit it.

Back when I started all this 'Skinny Fork' madness, my kiddo was just a little 3-year-old tot. Now she's at the end of 6th grade. One thing that hasn't changed through the years, has been that I always, every year for her birthday, make some sort of rainbow funfetti style magic treat.

Birthday Cake 'Cake Batter' Waffles

To say that these waffles were a hit this week would be a vast understatement. I had originally made these waffles some years ago and just this week decided that it was high time to revisit them with my new waffle maker, and I was not disappointed - and neither was my daughter. She’s been a bit of a waffle fiend lately, and being as she’s one of the most picky eaters I’ve ever known, I was a little concerned that she would turn her nose up at these. But, she didn’t!

These waffles turn out light and fluffy and perfectly soft. The batter makes quite a few waffles, even with using a full cup of batter for these with my giant Belgian waffles, I got 7 of these bad boys…

Skinny Baked Funfetti 'Cake Batter' Oatmeal

Back when I originally made this, my amazing little girl wass turning 4 years old the very next day and I could hardly believe how fast time was flying! Today, she’s a month into 10! One of her most favorite things in the world when she was little (and still is today) are sprinkles. Every year for her birthday I always try to come up with a 'sprinkle' heavy (funfetti) dish in her honor.

Well, alright... so funfetti and sprinkles are a few of my most favorite things in the world as well. I mean... what's better than eating a rainbow? I like to imagine that it appeases my inner child for a while…

Skinny Birthday Cake Cinnamon Rolls

When I originally made these Skinny Birthday Cake Cinnamon Rolls it was for my daughter’s third birthday. Today we are just about a week and a half away from her turning ten! Happy early birthday Lily!

In honor of my sweet princess, I decided to whip up another batch of special homemade cinnamon rolls, and in the process, give the images a bit of a facelift. The recipe has remained the same because it’s just that damn good. Tried and true, it has held strong through the years. Lightened-Up Cookie Monster Brookie Cake

As it turns out… I have a cookie monster living in my house and she’s turning 9 years old tomorrow. Though maybe she’s more of a cake monster since she’s somehow managing to get three birthday cakes this year due to a series of fortunate events. Yes, FORTUNATE events.

Every ear for my daughter’s birthday, I make her something special that I can take up to her school at lunch and let her share with her friends. This time around she requested a cookie cake. Which… is what I made last year. And we can’t do the same thing over again. So! I decided to take that cookie cake a step further and make it into a BROOKIE cake. What’s a brookie, you ask? A brownie and a cookie combined together!…
