Back to school with the kiddo today after the two weeks off for the holidays. And going back to school always means a tighter schedule so it’s always nice to have snacks on hand. This Peanut Butter Cup Snack Mix is one that the whole family can enjoy. There’s a little bit of sweet and a little bit of salty in there, along with varying textures of soft and crunchy; all things that I love about a good snack mix.

One of my favorite things about this Peanut Butter Cup Snack Mix is that it stays good and is shelf stable for a good long time. It would happily sit on the shelf for a good week or two without changing at all, and maybe for even longer than that…

Everyone is all into banana bread right now. And I’m over here like… normal banana bread can be boring. Let’s jazz it up a bit with something extra special. Peanut butter and chocolate. Hell. Yes. This Peanut Butter Cup Banana Bread is about ad decadent seeming as banana bread can come. The batter is made with a touch of peanut butter and then mini peanut butter cups are mixed in for added amazingness.

The batter itself is lightened up by way of plenty of mashed banana and some greek yogurt too. There’s also no actual sugar used in this bread. It’s made with natural sweeteners and blends. The end result is a light, fluffy, rich and delicious breakfast bite that is sure to impress…

Who knew that making your own homemade peanut butter cups could be so easy?!

Kid-Friendly Spring Snack Mix

Spring is in the air. And do you know how I can tell? Allergies! I don’t know about the rest of the planet, but right here, right now, it’s allergy chaos. Never mind that Austin has been engulfed with what is now going on three WAVES of the flu. Just a couple of weeks ago, my daughter’s whole third grade class was pretty thin. Some out for allergies. Others out with a virus. Thank goodness the little babes are in a little bit better spirits this week.

Every year they have a fun book party to celebrate reading a certain amount of ‘crown books’. This year the request from the librarian was for Spring themed eats and treats. Halloween Red Velvet Chocolate Bark

Alright so… bare with me here. I know that chocolate isn’t the most healthy thing out there but, Halloween is just around the corner and as I like to say ‘everything in moderation’. Plus, we’re using some dark chocolate here so… that’s more healthy than other options, right? The truth is, I’m a firm believer in allowing yourself some treats here and there to keep yourself sane and from making worse decisions later.

So to make this bark a little more guilt-free, I decided to start it off with some dark chocolate. It’s my excuse for any kind of chocolate related candies or cakes. At least it has a few more health benefits than some of the other chocolates out there. That’s my story at least, and I’m sticking to it.

As we’re getting closer and closer to Halloween (my favorite holiday), I’m playing more and more with candies and chocolates of all kinds this year! While I’ve made a few candies in the past, it’s usually something that I try and steer clear of. Why? Well, candy making scares my pants off!
