This meal is super easy to make in the air fryer and it takes little hands on time at all. Plus you get plenty of meat and even more veggies, fresh and roasted both! I like to go with a broccoli ‘power protein’ slaw mix. But really any slaw of your choice will work here. I just like the additional veggies myself.
Air Fryer BBQ Chicken & Sweet Potato Bowl
Ingredients
- 1/2 Lb. Boneless Skinless Chicken Breast, Cut into 1" Pieces
- 1/2 C. BBQ Sauce
- 1 Large Sweet Potato, Peeled & Diced
- 1 Tbsp. Virgin Olive Oil
- 10 Oz. Slaw Mix
- 1/2 C. Light Ranch Dressing
- Salt & Pepper to Taste
Instructions
- Place the 1/2 Lb. Boneless Skinless Chicken Breast and 1/2 C. BBQ Sauce into a ziplock and toss to coat the chicken evenly.
- In another ziplock, add the 1 Large Sweet Potato, 1 Tbsp. Virgin Olive Oil, and Salt & Pepper to Taste. Toss to coat evenly.
- Transfer the chicken to the air fryer basket, and if there's room or if your air fryer has more than one basket, add the sweet potato as well.
- Air fryer both at 400 degrees F. for 8 minutes.
- Give it all a good toss/flip and then cook for another 5 minutes.
- While that's cooking toss the 10 Oz. Slaw Mix and 1/2 C. Light Ranch Dressing together.
- When the chicken and potatoes are done, divide the slaw, chicken, and potatoes evenly among bowls.
- Top with a drizzle of more BBQ sauce if desired and maybe even some sliced dill pickles to enjoy right away!
