PB&J Baked Oatmeal

Packed with protein and fiber, this guilt-free breakfast will have you energized and ready to conquer the day, no sticky fingers required! Enjoy it fresh from the oven or as an easy grab-and-go treat throughout the week. Snack time just got a serious upgrade!

I topped mine off with a drizzle of peanut butter and some honey roasted peanuts. I also served it with even more fresh strawberries for a filling and delightful little breakfast. I can’t wait to have this ready and on hand for the next few mornings!

This delightful dish combines the creamy goodness of natural peanut butter and the sweet swirl of your favorite fruit jam, all baked to perfection atop a hearty base of wholesome oats.

Ingredients

  • 200 G. Rolled Oats
  • 2 Whole Ripe Bananas
  • 60 G. Peanut Butter Powder
  • 420 Ml. Unsweetened Vanilla Almond Milk
  • 1 Tsp. Baking Powder
  • 120 G. Fresh Strawberries
  • 6 Tbsp. Fat Free Strawberry or Vanilla Greek Yogurt
  • 3 Tbsp. Strawberry Jam/Preserves
  • Optional Toppings: Extra Peanut butter or jam for drizzling.

Instructions

  1. Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x9" or 8x8" baking dish with non-stick baking spray; set aside.
  2. Mix together the 200 G. Rolled Oats, 2 Whole Ripe Bananas, 60 G. Peanut Butter Powder, 420 Ml. Unsweetened Vanilla Almond Milk, and 1 Tsp. Baking Powder.
  3. Pour the mixture into the prepared baking dish. (I used my immersion blender to blend the oats a bit because I like a smoother baked oatmeal.)
  4. Top with the 120 G. Fresh Strawberries, 6 Tbsp. Fat Free Strawberry or Vanilla Greek Yogurt, and 3 Tbsp. Strawberry Jam/Preserves.
  5. Place into the oven to bake for about 45 minutes or until the edges are browned and the middle is set.
  6. Once done, remove from the oven and allow to cool slightly before cutting into 6 pieces to enjoy right away or store in the fridge to easy breakfast through the week!
  7. Drizzle with any additional Peanut butter or jam!
