I heated mine up in the oven for a few minutes, but this could just as easily be tossed into the microwave for a bit as well and heated up that way for an even quicker way to dip! Rich and creamy cottage cheese and mozzarella forms the luscious base, layered with zesty marinara, savory Italian seasonings, and a parmesan and pepperoni on top.

Ingredients

  • 8 Oz. Low Fat Cottage Cheese
  • 1/2 C. Shredded Reduced Fat Mozzarella
  • 1 Tbsp. Nooch (Nutritional Yeast)
  • 1/3 C. Marinara
  • 2 Tbsp. Parmesan
  • Pinch Dried Oregano

Instructions

  1. Preheat the oven to 350 degrees F. and set out two oven safe ramekins.
  2. Place the 8 Oz. Low Fat Cottage Cheese, 1/2 C. Shredded Reduced Fat Mozzarella, and 1 Tbsp. Nooch (Nutritional Yeast) into a blender, food processor, or a cup for an immersion blender and blend down until mostly smooth and creamy. (Add a little water if you need to thin it out a little.) Season with salt & pepper to taste.
  3. Divide the cottage cheese mixture between the two ramekins.
  4. Top each with the 1/3 C. Marinara divided evenly.
  5. Sprinkle 1 Tbsp. Parmesan over each along with any pepperoni if desired.
  6. Place in the oven to bake for 5-10 minutes or until warmed and the cheese is melty.
  7. Top with a Pinch Dried Oregano and enjoy right away!
