Chia seeds are rather fascinating to me. I've often seen them tossed into rather healthy and often the most simple of recipes. They are really fun to play around with.
Don't be scared of them if you've never tried them! My mom is a little leery since the only other time she heard of them was back when 'Chia Pets' were popular. I suppose she's scared she'll start to sprout foliage. Anyway, I can't wait for her to try this jam!
I bought some of these dandy little seeds a while back from the whole foods 'nutritional' section of my local grocery store. I've seen them come in black and white. As far as I know there isn't any taste difference, only the color. Mine happen to be white!
These magical little seeds were a staple food to ancient Mayans and the Aztec. When added to liquid the seeds swell up into more of a gelatin! One tablespoon of chia seeds contains 5 grams of fiber and they will keep you feeling fuller longer than most other seeds.

Strawberry & Peach Chia Jam

The Skinny:

Ingredients:
3/4 C. Peach, Diced Small
1/4 C. Strawberries, Hulled & Diced Small
1 Tbsp. Chia Seeds
1 Tbsp. Lemon Juice
Directions:
Toss the fruit into a blender or food processor and blend until smooth to your liking. I wanted a few small chunks of fruit in mine, but you can blend it down more if you wish!
Pour the fruit into a small airtight container. Add in chia seeds, lemon juice.
Stir to combine.
Seal the container and set in the fridge for at least 30 minutes for the chia seeds to work their magic.
When ready, remove from the fridge and enjoy!
Serve on toast, in a parfait, or any other way you see fit.
