I'm not sure about the rest, but I know that here in Texas, chicken salad is basically a staple. No, no, no. I'm not talking about a salad with chicken on it. I'm talking about shredded chicken that's blended together with mayo, herbs, veggies, and maybe even some dried fruit to create a salad of chicken.

I've made a handful of lightened-up and healthier chicken salads in the past. But, today I wanted to do something just a little bit different. It's hot. It's hot. It's really really hot here in Texas right now and all I want to do is avoid using my stove or oven! So, today for lunch, I decided to go with a super quick and easy cold and crunchy salad. And when I say easy, I mean almost ridiculously easy. It's so easy that it only takes a whopping 5-10 minutes from start to finish with preparing it.

The best part? There is absolutely NO cooking or heating required! How do you do that? Well, cranberries! Club Sub in a Tub

So, back when I was in high school, my parents had a boat. It wasn't a big boat or an expensive boat. Just an old clunker of a boat. In fact, it ended up sinking. At the dock. ...And almost with my grandmother on it too! ...Even so, our family had a lot of great fun and adventures on that boat. Many a summer night and day were spent out there on the water, together, as a family. It's truly some of my fondest memories.

Almost anytime we'd go spend the day out on the boat, we'd stop by this old gas station along the way to fuel up good ole' Titanic and grab some sub sandwiches. I almost always got the same thing, a simple club sub sandwich.

Several months back, my dad went out and bought another old boat; after years of not having one and living within near walking distance of a lake now. He's been working on fixing it up and hopes to have it in full working order for the beginning of July for my mom's birthday. Seashell Pasta Salad

We're a few days into our week long theme of the ocean over here and we're really having a fun time of it! Since we're not big on seafood in this house, coming up with clever non-fishy ocean themed recipes has proved to be... well... a little challenging. It's also been so very worth it too though!

Summer lovin' happened so fast...

This salad was inspired by the one served at a local Mexican Restaurant that I first went to a few years back now. I was first introduced to the salad while at lunch with my Sister-in-Law and Aunt. I think it was of the best salads that I had ever eaten. And that's saying a lot since I have eaten my fair share of salads over my lifetime.

I've haven't been back to that restaurant in a good long while. Maybe that's because a couple of years back I cracked the code on their salad!
