Lately I have been trying to be a lot more mindful, especially with my time. It seems as if the older I get, the less minutes and hours there are in my day. Life has been whipping my tail lately and it all seems like such a blur. So, to help slow things down I decided to make this super easy vegan squash bowl. It's what 'Make Me Mindful' means to me right now.

I've noticed a lot of times that I tend to make vegan cooking a lot more of a task than it needs to be. Sometimes when it comes to food, the simpler - the better. And that couldn't be more accurate with this wonderful all inclusive plant based bowl that doesn't even require one dish to be made messy in the process of cooking it!...

The Big Game is getting ever nearer and I am super excited, just as I always am! Game day food is a huge part of my love of sports. I mean... let's face it, who doesn't like finger-food style stackable grub? I feel like I've been lacking a bit this year with my game day offerings, so it's time for me to get back into the swing of it!

Cheesy Spinach & Kale Verde Enchiladas

So, I made a test run of these enchiladas a few weeks back. I've had some enchilada scares in the past before, and always made them way more complicated than they needed to be. They were so good the first time that I just knew that I had to make them again with just a few minor tweaks!

These bad boys were so awesome that my brother's finance left me a note (or two) which I found the next morning after our family dinner saying that she loved them so much. Thanks Jess, that really tickled my pickle!

With it being so hot here right now, I was forced to bake these on our outdoor grill, which ended up working out just as well as in the oven so long as I kept an eye on the grill's temperature. How's that for being clever? The Texas heat will force you to be resourceful!...

Skinny Verde Chicken Enchiladas

With Cinco de Mayo right around the corner, I thought it would be a great week to fill with lots of Mexican inspired dishes! I'm all about Mexican food. I could seriously eat it every single day without complaint. My grandmother who is visiting me right now is the same way... and my mother as well. Oh, and my little one could eat her weight in beans and rice.

Yep, four generations of Mexican food loving women in my house right now!

I say Mexican food but, it's really more 'Tex-Mex'. I'm well aware that our idea here in the States of Mexican food is vastly different from what they actually eat in Mexico.

Yep! I've had real Mexican food before.

Regardless, one of my most favorite dishes are sour cream chicken enchiladas. So, I've taken those enchiladas and lightened them as best I can...

Quick Enchilada Sauce

This recipe for a basic red enchilada sauce is super easy and tastes great!

I left this sauce with a little bit of heat, but not enough to burn my toddlers tastebuds off. If you don't have sensitive little mouths in your house, you can always get more of a kick by adding in more chili powder or cayenne!...
