Chunky Monkey Blended & Baked Oatmeal

So, you know that famous ice cream flavor that we all know and love? Yeah, I sort of turned that into one of the best oatmeals I’ve ever eaten. And if you aren’t a fan of oatmeal - this might be just the right recipe to get you turned onto it! Blending up the oats into more of a powder takes away that oat texture but you still get all the health benefits.

This Chunky Monkey Blended & Baked Oatmeal ends up being vegetarian and gluten free. The oats and banana are pureed together before chocolate and walnuts are stirred in. It’s all baked up together to make two servings of a delicious ice cream inspired treat….

Baked PB&J Oatmeal

Who knew you could enjoy a PB&J for breakfast? Oh, wait. I did! This Baked PB&J Oatmeal is loosely based on a few of my other baked breakfast oatmeals but in PB&J form. Yep! There’s peanuts, peanut butter, and even jelly baked right into this oatmeal. Plus, I made it dairy-free, gluten-free, and vegetarian.

This Baked PB&J Oatmeal can be made in advance and reheats really well, meaning that it’s perfect for meal prepping and having on hand through the whole week. And, if you aren’t a fan or are allergic to nuts, you can always swap out the peanut butter for any nut free alternative. That’s right, even those with sensitivities can enjoy this with the right alterations…

Skinny Peanut Butter Bread

Baking is the name of the game right now. It never fails, every year in the midst of Fall and Winter months I attempt to get as much use out of my oven as possible since it becomes too hot to do so through the most of the Spring and Summer months. I’ve made a lot of breads lately and I’ve got to say that this Skinny Peanut Butter Bread is one of my favorites.

Brunch Box

Like I said, I’ve been asked for more lunch/meal prep box ideas so I’ve been hard at work churning a few of them out. This Brunch Box is generally my go-to meal prep box. Let’s face it, for a lot of us out there, we’re far too busy in the morning to actually sit down and eat breakfast. For me, my ‘breakfast’ time generally rolls in more so somewhere around 10 in the morning. Which, is really more of brunch time than breakfast or lunch. That’s one of the reasons this is dubbed, the Brunch Box.

Simple Snack & Travel Boxes

The third and last box is the veggie snack box, which is full of fresh veggies including carrots, tomatoes, sugar snap peas, and zucchini. That’s all paired with a hummus. I used a local sunflower seed hummus, because it’s one of my new obsessions.Well, a lot of traveling happened this weekend and being as I’m trying to eat a more consciously while traveling, I thought I would try my hand at some travel-friendly snack boxes! I wanted to make sure that these snack boxes were simple and easy to put together while being gluten-free, soy-free, and vegetarian too!

'Nut & Seed' Grain-Free Pumpkin Spice Granola

It's been a hot minute since I made up a batch of homemade granola, mostly because it's just been way too hot here to even think about turning the oven on. But, sometimes... it's just worth it. And this morning? It was just that - totally worth it! With pumpkin spice season on the horizon, I thought there was no better time than now to tempt the cooler weather in with another pumpkin inspired treat!

I based this grain-free granola off of one that I made a while back. The main differences would be the spice used in it and the seeds that I chose to include. Since we're going with the Fall theme, I decided to use pumpkin seeds. Two kinds of pumpkin seeds, that is. I picked up a raw one to roast with the granola, and a lightly salted roasted seed called 'snow white' pumpkin seeds to add in at the end…
